Gotta get a CROCK POT (also known as a slow cooker). That three hour roast will take about 10 minutes either at night or in the morning.
I make a killer chili in my crock pot.
Cut up (into about 1/2 inch cubes) about a pound to a pound and a half of a thin cut of beef. Toss it in the crock pot. Add your choice of Kidney beans (Two cans well drained), Two cans of diced tomatos(I like the tomatos that are already seasoned with Chili seasoning). Dice up some onion.
You can do all of this the night before and place in the refrigerator. The next morning, just place the crock back into the base and cook on low all day long. You will be well rewarded when you get home.
There is also some Macaroni and Cheese if you want to cook.
Boil a one pound box of Macaroni (or the pasta of your choice). When it is done, drain and spread out onto a cookie sheet.
Pour two 14 ounce cans of evaporated milk and 1/2 cup chicken broth into a microwave save bowl and heat until warm(but not boiling)
In the pan you cooked the macaroni in, melt 3 Tablespoons of butter. Then whisk in 1/3 cup of flour. Cook while whisking for a couple of minutes. SLOWLY add the milk mixture while whisking. VERY IMPORTANT. DO NOT STOP WHISKING.
Then add 1/3 cup Parmesan cheese, 2 Tablespoons Dijon mustard and 1 pound of Sharp Shredded Cheddar Cheese. Stir until all of the cheese is melted.
Add the cooked macaroni(or pasta) back into cheese and heat until the pasta is reheated.
Again, your efforts will be well rewarded.

My suggestion is to get either a George Foreman or Express 101 which cuts back on your cooking time and still allows you to enjoy the tastiness of foods without all the extra time included. With an Express 101 you can cook so many different things from Breakfast, lunch, dinner, and dessert.. It even includes a recipe book. BONUS!! I have seen them make homemade corn dogs, breakfast burritos, wraps, and things even as far down the line as Chicken Cordon Blu and Cakes, all in less than 7 minutes.. The great thing is it has two compartments so for you just cooking for One you can easily throw your meat into one compartment and Rice and veggies or something like that in the second compartment. I think it is a great cheap investment, space saver, time saver, and energy saver...

Another bonus being that you are a single guy you are not going to want all the extra work put into cleaning up that it will take for alot of these other recipes (considering that you said time was an issue). Cleanup is simply wiping it down with a sponge and paper towels. As a full time mom of two that works and attends UNCW I wouldnt trade it for a thing..

This recipe might take an hour, but you can eat it at breakfast for a few days anyhow.........
Banana Chocolate Chip Bread
½ cup butter (softened)
1 cup sugar
2 eggs
½ tsp salt
1 tsp vanilla
Beat together above ingredients then add:
3 ripe bananas, mashed
1 tsp. baking soda in 1 Tbsp hot water
2 cups flour
1 cup walnuts, chopped
½-3/4 bag semi-sweet chocolate chips
Mix all together and bake in loaf pan at 375 for 1 hour.
Here's another recipe I use when I'm in a hurry - there is no name to it:
Cut 2 -3 chicken breasts into chunks, sautee in pan with onions, garlic, any other seaonings you like (I use fresh green onions)
Add forzen veggies - I use 1 bag of mixed veggies, and a half bag of frozen corn, but you can use whatever you prefer
Then, add 2 cans of Cream of (mushroom, celery, chicken) soup.
Stir all together, heat all the way through. Serve over noodles or bisquits. It's simple and you can make it the way you want, so you have some choices there. I bet it'd also taste good with cornbread, and you can find a boxed mix at your local Wal Mart or grocery store.

Get a Crock Pot. Then you can throw everything into it when you leave for work in the morning and when you come home, it will all be finished. If you google "crock pot recipes" you will come up with a million and most require a very small amount of work. Even though it cooks for hours, you dont have to be involved in it all. My bf takes two lbs of ground beef, adds Montreal Steak Seasoning, Soy Sauce and Worcestershire Sauce and mixes it all up with his hands. He then forms as many patties as he can out of it and then freezes the ones so he has quick, easy hamburgers. Marinated Steak Tips on bagged salad also goes a long way and can be a realyl fulfilling meal. Or use the link below, which has tons of recipes for single guys!

My recipe for Bachelor Spaghetti. Very good and so easy it's criminal. The hardest part of this recipe is hiding the cans.
1 14.5 oz can of Diced Tomatoes with Basil, Garlic & Oregano*
1 14.5 oz can of Diced Tomatoes w/ Balsamic Vinegar, Basil, and Oil*
1 14.5 oz can of Diced Tomatoes Plain.
1 8 oz can of Tomato Paste.
Stir these all together well and simmer over low heat until it bubbles. Keep a lid on it LOOSELY so that when it starts to bubble, you don't get it all over the stove. Remember LOW heat because Tomatoes have sugar in them which can burn easily. Stir it very often to prevent burning.
Spaghetti Noodles are easy to do. Put them into boiling water. Every so often take out one noodle and cut it in half. You know they are done when the center is no longer lighter colored that the rest of the noodle. Simple.
Drain, serve.

Even though I can relate, I still have issues cooking for one. What I do is cook a meal and use plastic containers (small ones are great for single servings) and freeze at least two servings worth (2 containers) that way it is available for lunch/dinner at a later date and I don't get tired of eating the same meal several days in a row.

Chicken Pasta Salad
1 lb. box rotini pasta (you can of course use any kind, but I find that the rotini holds the flavor of the sauce better)
1 large can of chicken (you'll find this in the grocery store near the tuna or prepacked meats)
1 large tomato (chopped)
6 sweet gherkin pickles (sliced)
approx. 2 tablespoons of green olives with pimentos (chopped)
2 1/2 c. Miracle Whip Salad Dressing
3 Tablespoons sweet pickle relish
Salt & Pepper
Place your pasta in a large pot to boil (follow instructions on the box for boiling). Then prepare your sauce.
Drain the can of chicken, then dump into a large mixing bowl and use a fork to break apart the chunks, chop up the tomato and olives, then slice the pickles and place them all into the mixing bowl, add miracle whip and relish, then mix it all together. Drain pasta and run cold water over it to cool quickly, add to the bowl and mix. Add salt and pepper to taste. Serve cold!

I would learn to make omelettes ... they are a basic part of French cuisine, and for good reason: you can fill them with
^ ham
^ fresh herbs
^ cheese
^ mushrooms or truffles, cepes or chanterelles
^ scallions and sour cream
^ shrimp
^ crabmeat
^ potato & onion browned first
...have them Paris sidewalk cafe style with sliced garden tomatoes, some French bread and butter, some Perrrier, and a really nice cup of coffee .... take absolutely NO time to make!!!
p.s. Let the butter in the omelette pan brown just a *little* before you slide in your eggs, it makes a delicious taste ...
for each omelette: 3 eggs, a tablespoon of water
