The sweetest apple may not make the best apple pie. The best apples for pies are Jonathan, Jonagold, Winesap, Pippin, and the classic Granny Smith. You will probably want to avoid Red Delicious apples, which are popular for eating, but won't hold their shape in the oven, turning watery and mealy instead.

I always use Granny Smiths in my apple pies. I make mine with the apples, a little apple cider, brown sugar, cinnamon, clove and allspice. Thicken it up with cornstarch and sprinkle the top crust with a crushed sugar cube.
My husband says that my apple pie rivals his mother's apple pie. That's saying a LOT. I think his mom's apple pie is DA BOMB!!

I REALLY prefer using Gravensteins, but they are very seasonal and very hard to get unless you live in California - my second pick is Granny Smiths - - I choose these because they do NOT get mushy. With the Grannys you have to use more sugar and cinnamon than with the other.
