Personally I'd get the 60GB version just for the full hardware backward compatibility for PS2 games. It has the emotion engine in the machine. The 80GB uses software emulation.
Not to mention that if later you find you need more hard drive space, just buy a different drive and replace the drive, no voiding of the warranty in doing that. Basic laptop harddrive is used in the machine, not a proprietary hard drive in there.

Here's the thing with the 60GB and the 80GB....
The 60GB uses the Emotion Engine (actual hardware) for PS1 and PS2 backwards compatibility which allows you to play about 97% of all PS1 and PS2 games.
The 80GB uses software emulation for PS1 and PS2 backwards compatibility which allows you to play about 80% of all PS1 and PS2 games.
Basically, that means that you'll be able to play a lot more PS1 and PS2 games on the 60GB version then you will on the 80GB, so if playing PS1 and PS2 games on the PS3 is a big issue for you, than I'd say go with the 60GB.
Another thing... the extra 20 Gigs of HDD space on the 80GB isn't really worth the extra $100 in my opinion, not when you can easyly upgrade the HDD on the 60GB with a bigger HDD.
You can get a 120GB HDD for about $70 (USD).
Here's a link for a tutorial on how to upgrade the HDD on the PS3:
http://youtube.com/watch?v=WAM0DN4k7L4
Here are the HDD specs and info you will need if you're thinking of upgrading the drive:
PS3 Factory Harddrive Specs:
-Sata 150
-5400RPM
-20GB or 60GB capacity
Basically you will want to get a 2.5" laptop harddrive that falls in these specs; 5400rpm speed, sata150 interface.
P-ATA drives will not work!
MY SUGGESTION: Go with the 60GB because it's cheaper than the 80GB, it has better backwards compatibility and upgrading to a bigger HDD is very easy.
HOPE THIS HELPS!

That depends on the country you live. NTSC regions have difference between 60GB and 80GB - hardware support is only in 60GB and 20GB versions only (Emotion Engine and Graphics Synthesizer chips from PS2), 80GB runs on software - less games supported. PAL regions are all the same - everything runs on software. As one of the answerers mentioned above - HDD can be easely replaced with any 5400 RPM 2.5" SATA HDD. 250GB costs around 170$ in most countries. Install it - you'll have PS3 250GB version! :-)))
