There are books compiled called "harmonies" that show the gospels in side by side comparison where they tell the same story, and separately when they cover stories specific to one gospel but not the rest. Its a great way to read through the gospels all at once. Obviously, each of them covers the essentials, but some cover them differently than others, and details vary between them. Hope this helps.

Gall is the digestive juice secreted by the liver and stored in the gall bladder. Presumably it was taken from some animal. The combination of gall and wine was used as an anaesthetic/pain killer in ancient times.
Jesus had promised his disciples at the last supper that he would not drink of the fruit of the wine again until he was with them in Glory. I believe he made this committment because he wanted to bear the full extent of the burden of our sins as he was sacrificed on the cross.

Given that the term was not referring to animal gall bladder extract then galls are derived from various plants and are rich in tannic acid - a well known astringent. Astringents were used to dry up excessive secretions and in this connection were considered to act as styptics and stop bleeding.

Maybe they wert offering him a girlie for a last good time. Anyway, Galls are lowlanders and Gaels are highlanders, or collectively: Gaul. Offers little help though.

"The Romans first offered Jesus sweet wine mixed with gall. "Gall" was poisonous liver bile. It was mixed with sweet wine and given to deaden the pain of dying. When they offered it to Jesus, He refused it. He was unwilling to dull the pain with narcotics or poison. He would faithfully and fully endure the pain." - Biblecenter.com

It was a sedative to ease the pain of crucifixion. But Jesus, having sampled it, refused it, because He had to suffer everything for our salvation.
