Banana Bread
1-3/4 cups all-purpose flour
2 tablespoons baking powder
1/4 teaspoon soda
3/4 teaspoon salt
1/3 cup shortening
2/3 cups sugar
2 eggs
1 cup mashed, very ripe bananas
Sift flour, measure and re-sift 3 times with baking powder, soda, and salt. Cream shortening and sugar until light and fluffy.
Add eggs one at a time and beat well after each addition. Add bananas and mix. Add flour in 4 portions and beat until smooth after each portion.
Turn into well-greased pan (8x4x2-1/2 inches) and bake in moderate oven (350 degrees F) for 50 minutes or until bread tests done. Cool on rack before slicing.
Yield: Makes 1 loaf

Banana Pie
1 cup milk
2/3 cup sugar
6 tablespoons cornstarch
1 well-beaten egg
2 tablespoons butter
4 bananas, rubbed through a sieve
1/4 teaspoon grated nutmeg
1 pie plate, plain pastry
marshmallow whip for frosting
chopped walnuts or pecan nuts (optional)
In a saucepan, stir milk, sugar, and cornstarch to dissolve. Bring to boil and cook for 5 minutes.
Add egg, butter, bananas, and nutmeg, beat hard to mix. Bake in slow oven for 25 minutes.
Spread top of pie when cold with marshmallow whip, and then sprinkle with finely chopped nuts.
Yield: Makes 1 pie

Banana Toast
3 ripe bananas
1/2 teaspoon salt
1 tablespoon sugar
1 teaspoon lemon juice
1 tablespoon butter
6 slices dry toast
Mash bananas; mix them with salt, sugar, lemon juice, and butter.
Spread the mixture on toast, and place it in a hot oven (425 degrees F) for about 5 minutes. Serve hot with cream, if desired.
Yield: Serves 6

Banana Doughnuts
5 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon soda
2 teaspoons salt
1 teaspoon nutmeg
1/4 cup shortening
1 cup sugar
1-1/2 teaspoon vanilla
3 eggs, well-beaten
3/4 cup mashed bananas (about 2 good sized bananas)
1/2 cup buttermilk
1/2 cup flour for rolling
deep oil for frying
Sift flour, measure and re-sift 3 times with baking powder, soda, salt, and nutmeg. Cream shortening, blend in sugar, add vanilla, and eggs; beat light and fluffy. Add combined bananas and buttermilk, and stir until well mixed. Add flour in 3 or 4 portions, stirring thoroughly after each addition.
Chill before rolling. Remove 1/4 of dough from refrigerator at a time, knead it lightly 4 or 5 times, roll to 3/8 inch thickness, and cut with floured 2-1/2 inch doughnut cutter.
Fry in deep oil heated to 375 degrees F until golden brown, then lift out and drain with absorbent paper. If desired, the dough may be covered tightly and kept in refrigerator for 1 to 2 days, to be fried as needed.
Yield: Makes about 3-1/2 dozen

Banana Relish
1 dozen bananas
2 pounds Bermuda onions
2/3 cupful molasses
1/2 teaspoon ground sugar
1 pound dates
1/2 pint water
1 teaspoon salt
1 pint vinegar
1 teaspoon allspice
Cut bananas, dates, and onions into small pieces, add spices, vinegar, and molasses; mix well together.
Turn into large stone jar or crock, bake on slow oven until a rich brown, and seal in jars while hot.
Yield: Makes 4 quarts

Cream of Banana Soup
1 quart green banana pulp
1-1/2 quarts chicken stock
1 small celery stick
1/2 onion
1 carrot
1 small bay leaf
5 peppercorns
salt to taste
1/4 cup flour
1/4 cup butter
1 pint cream, or milk
Cook banana pulp, stock, and seasonings together for about one-half hour until the mixture thickens.
Strain over the flour and butter which have been combined as for white sauce. Cook until thickened.
Just before serving, add the milk or cream. Heat. Serve with a slice of lemon on each plate as a garnish.
Yield: 10 servings

French Banana Pancakes
Pancakes:
1 cup all-purpose flour
1/4 cup confectioners sugar
1 cup milk
1 teaspoon vanilla extract
2 eggs
3 tablespoons butter or margarine, melted
1/4 teaspoon salt
Stir flour and confectioners sugar into mixing bowl. Add milk, eggs, butter, vanilla, and salt; beat until smooth. Heat a lightly greased 6" skillet; add about 3 tablespoons batter, spreading to almost cover bottom of skillet. Cook until lightly browned, turn and brown the other side. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed.
Filling:
1/4 cup margarine
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup light cream
5-6 firm bananas, halved length wise
whipped cream, additional cinnamon
Melt butter in a large skillet. Stir in brown sugar, cinnamon, and nutmeg. Stir in cream and cook until slightly thickened. Add half of the bananas at a time to skillet; heat for 2-3 minutes, spooning sauce over them. Remove from the heat. Roll a pancake around each banana half and place on a serving platter. Spoon sauce over pancakes. Topped with whipped cream and a dash of cinnamon if desired.
Yield: 10-12 pancakes

Banana Omelette
1 banana
1 small onion
2 eggs
2 rashes of bacon
Finely chop the onions and fry with the bacon.
Add the egg and the chopped banana and fry until the underside is golden.

1 courgette coriander, salt and pepper, chili powder
2 carrots
2 bananas
10 mushrooms
1 onion
half a yellow pepper
half a red pepper
1 cup water
4 slices bread, crumbed
Chop vegetables and mix together with the water and spices and place into baking dish.
Cover with bread crumbs and microwave on full power for 25 minutes.

Banana Fritters
Ingredients:
1 1/2 cups flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3/4 cup water
4 firm bananas
5 cups vegetable oil (for frying)
Method:
1. In a large bowl combine 1 cup of flour, baking powder, soda and salt. Gradually blend in the water and beat with whisk until smooth.
2.Cut each banana crosswise into 3 pieces. You should have 12 pieces altogether.
3.Coat bananas with remaining 1/2 cup of flour.
4.Heat oil in a large skillet over high heat. Dip banana pieces in flour water mixture, coating well.
5.Cook 4-6 pieces at a time until golden brown, about 3-5 minutes.
6.Drain on paper towels.

Peel the bananas, slice in half lengthwise. Lay 2-3 slces on a lumpia or spring roll wrapper, sprinkle brown sugar and cinnamon on the fruit, then tuck in both sides before rolling to the end. Deep fry until golden brown.. For variety, spread a layer of peanut butter on the bananas before rolling, and serve with vanilla ice cream.

banana boat, peel and slice a banana lengthwise put in a long dish, cover with chopped apple grapes orange segments or alternatively use a tin of mixed fruit, cover with fresh whipped cream and top off with a scoop of ice cream. or you could peel all the bananas chop into thin slices place on a baking tray then sprinkle some honey or syrup over the top and cook on a very low heat till hardened, let them cool down then pack in a lunch box theyll keep for days that way.

This should be cooked in the top of a double boiler, but you can cook it over low to medium heat, stirring constantly until it thickens--do not leave it unattended. Slightly beat egg yolks and temper with a small amount of the hot custard; stir well. Add egg mixture to custard pot and cook 2 more minutes. Remove from heat and add vanilla and butter. Let cool. In a 9 by 9-inch oven proof baking dish, alternate pudding, bananas, and wafers, beginning with pudding and ending with pudding. Add topping, if desired. For the meringue topping, if using: Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar until stiff peaks form, then spread onto top of pudding mixture. Bake until golden brown.

Rum bananas, use white rum, good butter and brown sugar nob of butter in frypan, add bananas fry some, then add sugar to caramalise, then a Julia Childs measure of rum, poor some down your gate as well at this point to ensure quality of rum, boil off alcohol a bit. Serve with a good vanilla icecream.

I love bananas and warm custard, real comfort food.Try bananas with warm chocolate custard.Or even swiss roll cut into slices, chopped banana and warm custard poured over the top.Simple, sweet and delicious.

here is a yummy little number
get your narners and mash them up. then grate some chocolate not loads but a good amount
then spread banana mash over bread and sprinkle chocolate on top, add another piece of bread on the top and put in sandwich toaster and hey presto you got one yummy snack!
