I am looking a for a natural substance that will help me gelatinize fruit juice. I talking about juice that I squeeze in my own home but I want it to be a natural product because I don't want to defeat the purpose of drinking juice.

Gelitan is a natural product so just buy the plain or unflavored and use it. It won't take very much. (I use unflavored gelitan to thicken my homemake veggie soups and stews.)

make a gelatin then mix your fruit jiuce while it is still hot and not yet molded

Try aspic. I'm not sure what is in it. You can buy it at the grocery store.
