get some organic cookies and crush them up, mix with organic butter and smash into pie pan.
maybe even try some granola...
if they make a healthy oreo, you would have a tasty crust...
I am sure there is some kind of healthy cookie that you can use.

You can grind up in the food processor (or buy preground in stores like Trader Joes) pecans, almonds, or walnuts and mix them with sugar and butter, just like a graham cracker one. Toast the nuts in the oven first to get a better flavor. They all make great no-bake crusts.

I usually use ground nuts, like "Da Answer" suggests mixed in with my graham cracker crumbs when I make cheesecake, but some other options are:
Grind up Zwibik (?sp?) baby toast
Crumble your favorite low fat cookie (Nilla Wafers,
Animal Crackers, Gingersnaps, etc.)
Use a recipe for crumb topping (flour, brown sugar,
a touch of butter, cinnamon, ginger, etc.)
