1/ 2 cup butter
1 cup boiling water
1 cup sifted flour
1/2 tsp salt
4 eggs
add butter to the boiling water and remove when butter is disolved. Add flour and salt and beat with a spoon for 3 minutes. Let it cool and then add the eggs whole, one at a time until creamy. Drop spoon fulls onto a greased cookie sheet. Bake for 10 minutes at 375 degrees, reduce the heat to 350 and cook for an additional 15 minutes. Let cool and cut a slit in the top, fill with whipped cream or vanilla pudding if you have it :) and refridgerate. Yum!

Well, if you've got some baking powder and shortening (though you might also be able to just double up on the butter instead), salt, and maybe some dried fruit of any kind (raisins, cranberries, etc) or some vanilla...or heck, maybe a tablespoon of honey or maple syrup, make Welsh Cookies. Recipe: Welsh Cookies Ingredients: 2 c All Purpose Flour ¼ c Shortening 2 tsp Baking Powder ½ c Dried Fruits (currants, etc) 1 pinch Salt 1 Egg ½ c Sugar ¼ c Milk ¼ c Butter (or margarine) Confectioners’ Sugar (for decoration) Directions: 1) Sift flour, baking powder, salt and sugar in a medium mixing bowl. 2) Cut in butter and shortening with a pastry blender (or fork) until mixture looks crumbly. 3) Toss in dried fruits. 4) Beat egg and milk together and add to flour mixture, mixing just until blended. 5) Form dough into a ball, which should be the consistency of pastry dough or biscuit dough, and roll to between 1/4 to 1/8 inch thickness on a lightly floured surface. 6) Cut out rounds with a 3 inch floured cookie cutter. 7) Heat a skillet or griddle over medium heat until a few drops of water jump and sizzle when dropped onto the surface. 8) Lightly grease skillet with butter and cook a few cakes at a time at a little below medium heat for approximately 3 minutes, or until golden brown. 9) Turn over and cook another 3 minutes, or until golden. 10) Remove and let cool completely and store Welsh Cookies in a plastic bag, Ziploc, or airtight container. 11) When ready to serve, sprinkle with Confectioners’ sugar. Notes: Chanced upon Welsh Cookies at the Dublin Irish Festival in Columbus, Ohio and had to have a recipe for them. They’re not overly sweet and you can put a multitude of dried chopped fruits or nuts in them for many variations. You could even add some orange or lemon zest for an added flavor kick. Evidently, they are also called “miner’s biscuits”, as they were originally used as a snack for mine workers.

make crepes - put your eggs in a bowl mix in your flour , whisk in your milk , add your extract and pour melted into mix but, save some butter to cook the crepes. a little maple syrup and your whipped cream, enjoy.
sugar cookies try this, 4oz room temperature butter,2cups sugar , cream in mixer. 1/2 tbsp vanilla extract , 2eggs add to mixer.salt tsp and 3 cups flour until dough is smooth . wrap and refrigerate 1hour . roll out your dough and make cookies. good luck.
