SAUTEED CHICKEN FILETS WITH LEMON
1 1/2 lbs. chicken tenderloins
1/2 c. olive oil
1/2 lb. linguini, green
1/2 lb. linguini, white
4 tbsp. parsley, fresh, chopped
1/4 c. flour
1 c. chicken stock
1/4 c. white wine
1 tsp. salt
1 tsp. black pepper, freshly ground
4 lemons
In a large pot of boiling salted water, add 1 tablespoon of olive oil and cook the linguini, stirring constantly until done. Pour into a colander in a sink and run cold water over linguini to cool. Set aside.
In a large saute pan, place enough olive oil to cover the bottom of the pan. Dredge the chicken tenderloins in the flour and add to the heated saute pan of olive oil.
Cook chicken tenders until lightly browned and add parsley, chicken stock, white wine, salt, pepper and juice of 3 lemons. Simmer a few minutes to incorporate flavors. Stir in linguini and serve. Garnish with lemon slices. Serves: 4.

SAUCY CHICKEN FILLETS
4-6 chicken fillets, skinned
3/4 c. boiling water
2 chicken bouillon cubes
Garlic powder to taste
1 tsp. Worcestershire sauce
1/2 tsp. oregano
1/2 tsp. paprika
1/2 tsp. dry mustard, dissolved in 1 tsp. water
Place chicken in a shallow baking dish and sprinkle with garlic powder. Dissolve bouillon cubes in boiling water, then add remaining ingredients. Pour over chicken fillets and bake for 1 hour at 350 degrees uncovered. Baste well. OPTIONAL: Sliced mushrooms may be added last 1/2 hour of cooking time.

Try this Chicken Marsala recipe and serve over wild rice, pilaf or white rice. Yum!
Chicken Marsala
David Herzog
4 chicken breasts or thighs, deboned and pounded to ¼” thick
Olive oil
½ cup flour
1 tsp. Emeril's Essence
½ tsp. kosher salt
¼ tsp. fresh ground black pepper
1 cup heavy cream
¼ cup Marsala wine
8 oz. Crimini mushrooms
½ bunch green onions, sliced thin
In a medium sized Zip-Lock bag add flour, and essence, close bag and shake to mix. Set aside. Season chicken with salt and pepper on both sides, let sit 5 minutes then dredge chicken in flour mixture. Place chicken pieces in a hot and oiled 12” Dutch oven. Brown both sides. When second side is browned add Marsala wine and cover cooking for 3 minutes. Remove lid, add mushrooms and cook 2 to 3 minutes. Add heavy cream and reduce to ¾ of total volume. Garnish with green onions in Dutch oven. Serve hot with sauce under each serving, Serves 4

What possible reason does hubby give for his bad example?
Chicken pieces are highly versatile with almost any sauces.
Spaghetti sauce, cream of mushroom soup, etc.
Add chopped onions, celery, peas, carrots, peppers, etc.
children need to learn that veggies are vital for good diet.

I pan fry my chicken then finish it off with lemon juice, garlic, parsley, and butter. Yum yum. Try white wine instead of juice. How about reducing a citrus juice like orange, adding honey, and some capers? Again you can add butter to it. Just try things you think your family will enjoy. That's why cooking is so fun.

Mustard Chicken- Why dont you try adding cream and mustard to the chicken.Its beautiful
Salsa Chicken- Just add a jar of mexican salsa to the chicken & serve with rice & grated cheese.
Apricot Chicken- Add a jar if apricot nectar & french onion soup mix to your chicken,boil then serve.

Try oriental style............ just make sauce from tomato ketchup, chili sos and kicap cap kipas udang and dont forget oyster sauce. Kalau untuk noodle just add more water and add some thickening agent..... Thats it
