What rules your judgment regarding following the 10 commandments, vs. kosher laws, vs. sexual/menstrual laws, vs., sabbath restrictions, vs. jubilee laws, etc.?

They are all important to follow...though only through Christ can we understand them.

Before I answer the question directly; permit me to set the foundation for the answer. Congradulations on discerning that old testament does not include Genesis and several other books. While it is not all 'law', I suspect Numbers should also be included in the above list.

As for which Exodus 20 -Deut. 27 inclusive laws, 'we' should obey or not obey; 2 part answer;
1. (General rule of thumb) All of them were 'thrown out' when Christ died on the cross;
2. (Exception to the rule) If the 'rule' was reauthorized between Matthew 1 and Revelation 22 inclusive, then the principle stands today.
(Personal opinion; I prefer to think of them as guidelines not rules because (to me presently; a rule (who,what,when, where, how) has no exceptions; a guideline (who,what,when, where, how, why) is a guide but 'why' can change focus). (1 Samuel 16:7).

I don't follow any of them, although I do find the 10 commandments to generally be a good . I'm a Christian, not an ancient Hebrew. Jesus, Peter, and Paul all rejected the ancient laws, preferring to base their "law" on faith, charity, and love. Christ specifically rejects the sabbath laws, and Paul and Peter both reject kosher laws and "cleanliness" laws like your menstruation laws you mention. Most of the violent laws in the Old Testament directly contradict Jesus's teachings on love and tolerance. This essentially results in a rejection of all "laws" that contradict those basic premises. If you really understood the Bible and how Christianity relates to it and didn't cherry-pick it out of context, you'd realize that this argument is valid. What you are doing is pretty much tantamount to saying that the Constitution is stupid because it has amendments for slavery. It's been amended, silly! Don't feel badly about it, though. A lot of Christians ignorantly do the same thing.

All rules for which the number of is a multiple of 3 or the result of it modulus 7 is 2 are invalid.

Many months ago a very smart person (Laptop Jesus) told me there was a special decoder ring that would let you know which OT laws that Jesus said we did not have to follow (dietary laws for example) and which ones we still have to follow (Ten Commandments). But alas I have never received my decoder ring so I can't answer that one for you.

The jewish Law was nailed to the cross along with Jesus. He set us free from the Law!

Col 2:14 Blotting out the handwriting of ordinances that was against us, which was contrary to us, and took it out of the way, nailing it to his cross;

Then He wrote His laws upon our hearts:

Hbr 8:10 For this [is] the covenant that I will make with the house of Israel after those days, saith the Lord; I will put my laws into their mind, and write them in their hearts: and I will be to them a God, and they shall be to me a people:

For the ten thousandth time, the Levitical laws and Mosiac laws were given by God to the Hebrews.

Gentiles were never under them.

Those laws are Jewish laws and they apply only to God's chosen people the Jews.

I guess those people who say it's important to follow them all are still sacrificing animals. I suspect many of them haven't read this portion of the Bible. I don't blame them, it nearly bored me to death. Otherwise, they pick the ones they like, and throw the rest away.

They follow whatever refers to homosexuality. Everything else they ignore.
