At least three, originally.
1) Book J - Historical narrative, written c. 9th century BC in Judea, leads up to its conclusion in the life of David.
2) Book E - Mostly a satire of the reign of King Jereboam over Israel, written c. 9th century BC by a priest from Shiloh
3) Book P - Historical fiction, meant to paint a picture of a Utopian Jewish society living under a theocracy, written by a Judean priest shortly after the return of the Jews from exile in Babylon.
All three were combined into a single book a couple of hundred years before Christ.
