It's weird! They just know. They probably have senses. Like when we take our cats to the vet, they meow all the way there & almost all the way back. When we are about 1 mile from home, they stop. They know they are almost home & will be safe soon. Perhaps it's the smell of the air, or built in GPS as suggested.
We had 14 cats at one time (3 were ours) when our neighbor moved & left 2 pregnant cats behind. We had to find homes for them& the 9 kittens. We found a home for one of the mamas' after getting her fixed. This home was over 5 miles away.
A week later, the new owners called to tell us the cat got out & they couldn't find her. 2 months later she showed up at our house, knocking on the window & crying. We couldn't believe she made it all the way back! We ended up keeping her as it was obvious she alrerady decided to adopt us. She died when she was 12 years old of cancer, but had a full life of lovings.
Some cats get found by other people who adopt them & keep them as their own, so never make it home. Always get your pet microchipped by a vet. The chip gets registered in a data base accessable through the humane society, etc... you call them & your vet if your pet gets lost & an alert is entered & lost animals have a better chance of coming home.

When i was little we had a gorgeous cat called Milo but ended up having to give him to a friend who lived around ten minutes away.. The night we dropped him off he went missing within a couple hours, by the morning he'd somehow made her back to our house... strange strange cat
After a few months he ran away... Then around a year later he was back at our house again.
I have no idea how to explain that and i don't think i'll even try to... some make it back home, others don't... they'll be picked up by the authorities as a stray, adopted by someone else or unfortunately get hurt trying to get home.. there's no way to know..

Don't listen to that dumba-- Carlos. Some people just like to piss people off. Typical male. Anyway, some cats do find their ways home. Some don't. Some find another home that they might prefer better.
Did you take your cat far out somewhere and leave it? I hope not. I'm assuming you're just curious. I would hope.

Cats kind of have an instictive GPS system. That is why when people move the cats will go back to the old house if they get out.

Most of them are lost and stay lost. Only a very small percentage ever return, and nobody knows why those can but the majority of the rest of the cats can't.
