When I think of Alabama food I think of foods made with the crops grown in Alabama and the history of Alabama. Since Alabama grows peanuts, I think of recipes - main courses and desserts made with nuts. I think of Cajun foods, southern dishes like frogs legs, shrimp, crawfish. Since Alabama joins to the Gulf of Mexico, any fish living in the gulf would be Alabama food. I'd think alligator (that's very good, by the way), I'd think foods loved by the plantation owners in the past and the workers on those plantations, from the simple to complex meals. I'd think sweet desserts for a hot afternoon with cool ice tea or a mint julip. Pecan Pie, Sweet Potato Pie, Lemonade Pie, etc. Jambalaya too.

ALABAMA BBQ RIBS

3 lbs. country style boneless pork ribs
1/2 bottle bbq sauce
Worcestershire sauce to taste (approx 3 tbsp)
1 can cola

Place ribs in a shallow pan. Mix BBQ sauce and Worcestershire sauce in a bowl, set aside. Pour cola over ribs. Pour BBQ and Worcestershire sauce mix over ribs.
Roll ribs around in sauce until ribs are covered and cola is mixed with sauce. Sprinkle garlic powder over ribs.

Marinate for at least 2 hours. Bake 1 hour at 350°F.

Can also be cooked on the grill.


ALABAMA CORN BOIL

8-12 ears corn unshucked (trim silky end)
8-10 onions (peeled
8-12 carrots (peeled)
8-10 bell peppers (halved and seeded)
8-10 potatoes (whole washed)
3 lbs. Polish sausage cut into 4" pieces
3 lbs. Italian sausage cut into 4" pieces
1-2 lbs. fresh green beans (whole, washed)
water
melted butter

Stand the ears of corn on the stalk end around the perimeter of a very large pot. Place all of the other ingredients in the middle. You can actually add ingredients until the pot is full.
Add about one inch of water to the pot. Cover, set stove to low setting, and let cook/steam very slowly for four to five hours. No need to disturb during cooking.


ALABAMA BISCUITS

1 c. milk
2 1/2 tbsp. sugar
1/2 tsp. salt
1 rounded tbsp. butter
1 pkg. yeast
2 c. unsifted flour
2 tsp. baking powder

Heat milk, sugar, salt and butter in saucepan and stir over low heat until butter is melted. Pour this mixture into bowl and let sit until lukewarm. Sprinkle yeast in the milk and let dissolve. (If milk is not lukewarm, it will kill the yeast.) Add flour and baking powder. Beat until smooth, about 20 times. Let dough rest for a few minutes. Turn onto floured surface.
Knead about 20 times. Roll into 1/2 inch thickness. Cut with a small glass or biscuit cutter. Stack biscuits, 2 high on buttered cookie sheet. (In other words, one on top of the other.) Baste top of biscuits with melted butter. Let biscuits rise for about an hour. Bake at 400 degrees for about 15 minutes or until browned. Makes 8 very large biscuits. (They have a homemade bread texture.)

BBQ sauce made with Mayo. I've never been, but I bet they have some good ol' southern comfort food. Fried chicken, collard greens, rice with gravy, and hot water cornbread. YUM-O.

well i grew up in a small town in alabama. and please note: all of this was made from scratch, everyday.

breakfast:
- biscuits or toast
-grits or rice
-scrambled eggs
-bacon, sausage, or fatback
-sometimes pancakes or cinnamon toast
-coffee or milk

dinner:
-fresh veggies from our garden - boiled or creamed corn, squash, turnip or collard greens, pinto, lima, or green beans, snap or black eyed peas, succatash, okra, etc
-fried stuff (okra, chicken, fish on fridays-normally whiting or catfish)
-macaronni and cheese
-spaghetti and meat sauce
-meat (chicken, beef/pork roast, cubed steak in gravy, chittlins, pigs feet, bbq, homemade sausages, goat, rabbit, pretty much whatever my grandfather caught hunting that week)
-corn bread or biscuits
-garnishes of fresh tomato, white onion, and cucumber dusted with salt and pepper
-sweet tea
- fruit pies/cobblers, homemade cakes, pecan pie, sweet potato pie
