You can do several things... You can stop talking to her altogether. You can be assertive and say "Excuse me, I was talking." Or you can just STARE at her when she interrupts, as if she's the strangest thing you've ever seen. This method might not work, though...she's probably too self-absorbed to notice!
I have a friend who CONSTANTLY interrupts with questions -- I just go on with what I'm saying. But at least she is listening.
I agree with you -- someone who constantly interrupts is incredibly annoying! Good luck.

You know what. I honestly have a bit of a problem with that...I will listen, but sometimes I finish sentences, because I don't want that person to think I don't know what they are talking about... I am working on it though...
What it all comes down to is she is constantly needing to validate herself, so that she can have a confidence boost. Some peopl who do that have low self esteem, which is why she will interrupt to finish your sentence or ideas so that she will feel better by proving that she is as capable as you or anyone else. Most people do this because they are over-confident. She has an inflatede ego that she feels she should pump up, because nobody can be smarter or more accomplished than her. This kind of person is not afraid of climbing up the corporate ladder, causing others to fall to the ground as she is on her way up. These people have to have everything under their control, and nothing can slide by under their nose without approval.
Verbal Self-Defense book quote:
"Be direct! They might not hear you because they are so self-absorbed. You might have to tap them or have light physical contact so you get their attention. Tell her that you are not finished talking yet. First do it politely with a smile, if it doesn't work, do it louder...."
Do not even acknowledge what she says if she interrupts. As soon as you find a pause, break in, take your stand, and tell her you are finishing your thought, and do not hesitate!

I would make eye contact with her and say excuse me can I finish. She might not realize what she is doing. Why do you worry about being rude? She obviously has no problem being rude.

Hey, don't weaken
If she is doing this, she does NOT care if she is being rude to you. Pay out on her, tell her she is being rude(do it in private so everyone else doesn't hear), if that doesn't work, do it in front of everyone. sometimes( as the song goes) "you've got to be cruel to be kind"

obviously shes tring to get someones attention
she likes attention so much. . . . shout at her to shut up while looking right down in her eyes in front of the other person.
no dont! thats not right but makes you feel good.
to be honest she needs telling . . . it depends what kind of person shes like. if your not gona get beat up talk her to one side and inform her she butts in and ask her if she'd stop
