use apple sauce instead of margarine?
like if I need 1 cup margarine/butter can I use 1/2 cup of apple sauce and 1/2 cup margarine?

You generally want to use 2/3 of a cup of applesauce for every 1 cup of oil, butter, or margarine a recipe calls for. Or just use a fat-free oatmeal cookie recipe like the ones on the site below, which have already worked it out for you.

You can use the applesauce instead of the margarine or butter - just use less of it. You can totally replace the fat with the applesauce but you won't get a crispy cookie - it will be very moist. Also, one thing you will need to do. When the cookie cools, it will become a little tough so zap it for about 15 seconds in the microwave to reheat it and it will be soft and moist again. Do this just before you plan to eat that cookie. Start with half the amount of the fat you were going to use and work up if needed. I seem to recall I used a lot less to make my fat-free chocolate chip cookies, using applesauce (in hubby's low-fat/low-cholesterol diet days).

I haven't ever tried it, but I would be careful, they my just fall apart. Applesauce is mostly liquid. Try 3/4 margarine and 1/4 applesauce.

Yes, the vegetarians do it this way. Not as moist, however taste great.

hmmm you could i suppose but the margarine works as a sticking agent along with eggs.
What i usually do is half the amount of butter and use apple juice or fruit juice for the other half.. it still works really well but you get a different texture.
you can also use olive oil
