I decided to ask a fun question, and I'm interested in trying out a new potato salad . Does anybody have any ideas ?

PENNSYLVANIA DUTCH POTATO SALAD

8 boiled potatoes
1 stalk celery diced
2 hard cooked eggs sliced
1 onion minced
1 T minced parsley
2 eggs well beaten
1 cup sugar
1/2 cup cider vinegar diluted with
1/2 cup cold water
1/4 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper
4 slices bacon

Even people who do not like potato salad like this. I myself have never been crazy about potato salad with mayonnaise because living in PA Dutch country I have been raised on the PA Dutch style potato salad. Give it a try and let me know how you like it.
Boil potatoes in their jackets. When soft, peel and dice. (I leave skins on) Add celery, hard cooked eggs and onion. Fry bacon in skillet until crisp & brown. (Do not drain) Beat the eggs, add the sugar, spices, vinegar and water. Mix well. Pour the egg mixture into the hot bacon and fat and stir until mixture thickens. (abou 10 mins.) Pour over potatoes and stir to mix well. Refrigerate for several hours or overnight stirring once or twice.

Part of this recipe we also use for hot bacon dressing that you can use to pour over lettuce for a hot salad.


2 eggs, well beaten
1 cup sugar
1/2 cup cider vinegar, diluted with:
1/2 cup cold water
1/4 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper
4 slices bacon

Make the same as above but pour dressing over a plate of lettuce for a very tasty salad.

Flo's Potato Salad

3 pound new potatoes, quartered, cooked until tender and cooled
1 cup mayonnaise
1/4 cup Creole or whole grain mustard
3 tablespoons fresh lemon juice
Hot Sauce
Salt
Freshly ground black pepper
3/4 cup finely chopped red onions
1 tablespoon chopped garlic
6 large hard-boiled eggs, sliced
1/2 pound cooked crispy bacon, chopped
1/4 cup chopped green onions, green part only
For the Salad: In a large mixing bowl, combine the potatoes, mayonnaise, mustard, and lemon juice. Season with hot sauce, salt and pepper. Mix thoroughly. Add the onions and garlic. Mix thoroughly. Fold in the eggs, bacon and green onions. Mix well.
To serve, mound the potato salad in the center of each plate. Lay a couple pieces of chicken next to the salad. Garnish with parsley.

This is a great recipe:

German Potato Salad

INGREDIENTS:
4 cups cubed, peeled, boiled potato
4 slices bacon, chopped
1/2 cup chopped onion
1/2 cup chopped green pepper
2 eggs, beaten
1/4 cup sugar
1/4 cup vinegar
1/4 teaspoon pepper
2 hard-cooked egg, sliced

Cook potatoes in a covered saucepan in an inch of boiling salted water until tender, about 20 minutes. Drain. In a large skillet, sauté bacon until almost crisp. Add onion and green pepper; cook 3 minutes longer. Combine beaten eggs with vinegar, sugar, and pepper; mix to blend well.
Gradually add egg mixture to the bacon mixture, stirring and cooking until mixture thickens. Remove from heat and toss gently with potatoes. Spoon salad into a serving dish and garnish with sliced eggs.
Serves 6 to 8.

My potato salad is never the same cause I never measure anything.
I like to use new red potatoes and slice them, not cube them.
Add green olives, hard boiled eggs, onion, mayonnaise, and a little yellow mustard(i don't always add the mustard). Just be creative and try your own, adding wantever you want. You will be surprised at your results.

One I learnt from my Polish mum:

Boil potatoes in jackets 'til tender and wait until cool and harden. Cut into cubes.
Boil carrots and dice.
Boil eggs, remove yokes and dice whites.
Dice sweet gherkins.
Pour Potato Salad dressing(home-made or bought) in bowl. Thoroughly mix in egg ingredients,gerkins,carrots. Season to taste.
Then ,dump in potatos and mix in with other ingredients until well incorporated.
Can add crispy bacon bits or ham.
Usually tastes much better when in fridge for a while.

I don't have an actual recipe but I love it with red potatoes...NOT PEELED..., hard boiled eggs, mayo, salt/pepper, a little half-and-half ( to make it a bit creamier...cuts the mayo flavor a bit) and dill...love the dill flavoring. I just make it to taste...I don't really use actual measurements.

Can't beat the Hellmanns recipe on their mayo jar. But I always Dr. it. Sliced black olives, green & red peppers, and fresh shrimp.

All the recipes sound great however, don't forget to sprinkle on the red paprika as the finishing touch.
