When a Christian who professes to believe in following the WAYS of Jesus and in actuality lives his/her life completely opposite to what Jesus intended then that person has ceased to be a true Christian. By definition, if a person ceases to BE a Christian, then he/she is a non-Christian.

That don't make sense...
You are either a Christian or not, one or the other. If you are a Christian in 'SPIRIT' and you have place yourself in Gods hands and pursue what He deems good and righteous then you are a Christian. If you love your neighbor as yourself (neighbor=all of humanity) then you are a Christian.
If you pursue worldly pleasures and enjoy that which is evil to God then you are not a Christian.

Huh?
If a person is a true believer in Jesus Christ, he/she can't get un-saved. Once saved always saved.
There are true believers and false believers (those who are either deceivers or deceived). But I'm not sure that's exactly what you asked. No one but God knows for sure which is which, and He will sort them out at Judgment Day. Jesus' parable of the wheat and the tares illustrates this truth.
But with guidance from the Holy Spirit, Christians can discern error when they see it by a person's "fruits". These fruits of the flesh and fruits of the Spirit are described in Galatians, and while we are not to judge, the evidence of one or the other is often hard to ignore.

I've never been a Christian, but my mum was for like 20 years, and at a funeral for one of her friends husbands, the minister was there, and he talked to everyone except from the widow. She never went to church again after that, because she was so appalled by his behavior.

No such thing. A Christian can be atheist to other religions, but not atheist to Christianity if, indeed, a Christian.

Epistle Of Saint James
Chapter 1
19 You know, my dearest brethren. And let every man be swift to hear, but slow to speak, and slow to anger. 20 For the anger of man worketh not the justice of God.
23 For if a man be a hearer of the word, and not a doer, he shall be compared to a man beholding his own countenance in a glass.
24 For he beheld himself, and went his way, and presently forgot what manner of man he was.
25 But he that hath looked into the perfect law of liberty, and hath continued therein, not becoming a forgetful hearer, but a doer of the work; this man shall be blessed in his deed.
26 And if any man think himself to be religious, not bridling his tongue, but deceiving his own heart, this man's religion is vain.

Nothing. If you are Christian you are not a non-Christian. Simple logic.
