They don't. They just seem that way.

The vast majority of species in rain forests are in fact ground-dwellers. The vast majority of large mammals (i.e. monkeys) are arboreal because they eat fruits among other things, and fruit grows high up on the trees.

If you consider the sheer volume of space occupied by the trees compared with the ground, you can see that there is a lot more living space in the trees. Why do more people live in big apartment buildings than in little apartment buildings? It's the same thing.
