The wrapper for the butter usually has the eight tablespoons as well as portion of a cup marked on the side so you can just line it up and cut it. The Land o Lakes brand has 8 tbsp in a stick, also marked 1/4 cup , 1/3 cup and 1/2 cup for the whole stick. It is easier to measure this way since you may not want the butter softened to measure in an actual spoon. This is based on four sticks of butter to a pound. You also could use the water displacement method in a measuring cup. Put one third cup of water in a cup measure add butter until it reaches the one cup mark. Pour off the water and you have your correct amount of butter. Usually more accurate for butter or shortening this way.
