HOMEMADE EGG NOODLES
1 cup flour
1 egg
1/2 egg shell of milk
Note: this makes a small batch -double the recipe if making a large pot - or tripple if a crowd. the milk makes the noodles so tender they melt in your mouth.
Place flour in a small bowl, making a dent in the center. Carefully the crack egg shell- put egg in the center of the flour. Use 1/2 of the egg shell you just cracked, fill it with milk and stir into the flour and egg mixture using a fork. Dough needs to be slightly sticky and form a ball, so if needed, add just a touch more milk until the right consistency.
On a well floured bread board or surface, carefully roll out the dough until very, very thin (almost paper thin). Dough will be stretchy and very tender. Using a Pizza cutter, cut the dough into thin noodles -length of your choice. It is okay if the noodles are not perfect and it is not necessary to dry the noodles.
Slowly sprinkle and stir the cut noodles into rapidly boiling chicken or beef broth mixture (see below for broth suggestions) it is important to put the noodles in this way - so they do not stick together in a lump. Turn down heat and keep broth mixture at a low boil and cook noodles until tender (approx. 1/2 hour). Stir constantly while adding the noodles and frequently while cooking to prevent sticking.
Recommendations for broth: Cook cubed chicken or beef in canned broth or bullion and water (enough to cover everything in the pot) in a large pot until tender with chopped vegetables of your choice - onions, carrots, and celery work best, add color and flavor. Add salt, pepper, and parsley for spice. Cook at a low boil until meat and vegetables are done and meat is tender. Bring mixture to a high boil before adding noodles.

Here is a easy and delicious recipe.
Easy Egg Noodles
INGREDIENTS
2 1/2 cups all-purpose flour
1 pinch salt
2 eggs, beaten
1/2 cup milk
1 tablespoon butter
DIRECTIONS
In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.
On a floured surface, roll out to 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes.
Allow to air dry before cooking.
To cook fresh pasta, in a large pot with boiling salted water cook until al dente. Abt 10 minutes or so.
Note: After rolling out dough, roll loosely as if you were going to make cinnamon rolls and then slice them into the widths you want. So after you cut them, just shake them out, and drop into boiling broth or salted water.)

My neighbours who are Sicilian taught me how to cook real ravioli dough for their son's restaurant.
They used the recipe with eggs and 1/3 fine semolina and 2/3 strong plain flour, a bit of salt. Mix with a bit of water until the whole mix sticks together. (Its kinda touch and go - more fun this way)
Knead the dough well about 10 minutes to get the gluten out of the flour. Also will make it easier to digest.
When the dough is flexible, its ready to pull through the pasta machine around 10 times until the dough is about 2mm thick.
Roast the pumpkins with garlic and some red sweet potatoes till soft. Mash. This is the filling for the ravioli.
Boil the ravioli until it rises to the top of the pot.
(Optional: After you drain and fry one side in a little oil so there's a contrasting texture of crunch and toasted colour)
Ready to serve with toasted pinenuts, olive oil, rocket leaves and dash of lemon and black pepper. Deeeleeshious!
Because I'm vegan I use a paste of blended linseeds and water to replace eggs.
You really can't tell the difference. In fact the dough becomes very flexible and does not tear easily.
You can use soba wheat flour if you'd like to attempt soba noodles. A pasta machine is a must!

I make the best noodles. first make chicken stock or buy. now 2 cups of flour and salt to taste then make a well in middle and add eggs 2or 3 mix up then put on flour board and roll out flat and then flour more roll up and cut then pieces and unroll let dry put in boiling water for about 30 min low heat

A cup of flour a large egg, a little bit of salt (I use chicken stock instead of salt if I'm making noodles for soup) and enough cold water to get it all moist.

My Mom makes a dough from water, flour, salt. Rolls it out thick and cuts in strips. The noodles are great!!!

The first answer can also be used to make speatzle, you know like little dumplings? Sooooo goooood, i add parsley and a bit more salt.
