Dark Chocolate Cake:
1 hour 10 min prep
1-2 servings
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water (see note below)
Heat oven to 350°F.
Grease and flour two 9 inch round baking pans or one 13x9 inch pan.
In large mixer bowl, stir together dry ingredients.
Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes.
Stir in boiling water by hand (batter will be thin). NOTE: I have tried it with 1/2 cup, 2/3 cup and 3/4 cup boiling water and we prefer it with less than 1 cup water. I usually use between 2/3 & 3/4 cups. The cake is still very moist but it doesn't seem to "fall" as much as it cools. This might have to do with our high humidity or brand of flour or other factors so I don't know if it will work for everyone.
Pour into prepared pan.
Bake 30 to 35 minutes for round 9-inch pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. (Do not use 8-inch pans or the batter will overflow.).
Cool 10 minutes; remove from pan to wire racks.

4 bananas, finely crushed
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
Cream together butter and sugar.
Add eggs and crushed bananas.
Combine well.
Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
Pour into greased and floured loaf pan.
Bake at 350 degrees for 60 minutes.
Keeps well, refrigerated.

banana bread:
3 ripe bananas, mashed (about 2 cups)
1 1/2 teaspoons vanilla extract
1 large egg, lightly beaten
1/4 cup fructose
1 1/4 cups whole-wheat flour
2 teaspoons baking powder
2 tablespoons melted corn oil margarine
Preheat oven to 350°F.
Lightly spray a 5 x 9-inch loaf pan with non-stick cooking spray.
Combine the bananas, vanilla, egg and fructose in a large bowl and mix well. In another bowl combine the flour and baking powder and mix well.
Add the flour mixture to the banana mixture and mix lightly. Add the melted margarine and mix just until moistened.
Pour the batter into the prepared pan and bake in the preheated oven for 45 minutes to 1 hour, or until a knife inserted in the center comes out clean.
Remove the bread from the pan and cool on a wire rack for at least 30 minutes before slicing.
Each serving contains approximately:calories: 85; fat: 2 g; cholesterol: 13 mg; sodium: 89 mg; carbohydrates: 15 g; protein: 2 g.

I'm going to give you three great recipes - all tested and loved. The Banana Bread is an old family recipe passed down for at least 5 generations and always moist and wonderful. The Chocolate cake recipe is one I found about 5 yrs ago that everyone loves - it's a cross between a brownie and chocolate cake and this one uses a boxed cake mix and cook and serve pudding (not instant). The third one is a Streusel Pumpkin Dessert which tastes just like a pumpkin pie with nuts. It has been a hit for some time now in place of the standard pumpkin pie.
BANANA BREAD
1 c sugar
1/2 c butter
3 beaten eggs
3 mashed bananas
3 T sour milk
1/2 c chopped walnuts or pecans
2 c flour
1/2 tsp salt
1 tsp baking soda
Sift together the flour, salt and baking soda. Set aside. Cream together the sugar and butter. Add the eggs and beat well. Add the mashed bananas and sour milk and beat well. Add the flour mixture and nuts and mix only until everything is blended and no white flour shows. Pour into a sprayed loaf pan and bake at 350º for 1 hr or until a toothpick tested in the center comes out clean.
CHOCOLATE CAKE
1 box chocolate cake mix
1 small box chocolate cook and serve pudding (not instant)
Amount of milk called for on the box of pudding
1/2 c chopped nuts
1/2 c chocolate mini morsels
Make up the chocolate pudding, bringing to the boil and boiling for the time mentioned on the box. Immediately pour over the dry cake mix in a bowl and stir. Pour into a 9" square cake pan, sprinkle with the mini morsels and then sprinkle with the chopped nuts. Bake in preheated 350º oven for 25-30 minutes - until a toothpick tests clean. The chocolate and nuts will be the frosting. Don't use the regular sized chocolate chips because they won't have time to melt completely.
STREUSEL PUMPKIN DESSERT
The crust on this is like a shortbread crust - very nice. Your guests will love this.
Crust:
1 1/2 c flour
1/4 c sugar
1/4 c powdered sugar
1/2 c cold buter
Streusel topping:
1/4 c brown sugar
2 T flour
1 tsp cinnamon
2 T cold butter
1 c chopped pecans
Filling:
1 large can pumpkin pulp - not pumpkin pie mix
1 c sugar
1/3 c brown sugar
1/4 c cornstarch
3 tsp cinnamon
1 tsp salt
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
2 (12 oz) cans evaporated milk
Garnish:
Whipped cream
additional cinnamon
Crust: Combine flour and sugars. Cut in the butter until crumbly. Press into a greased 9x13" pan. Bake in preheated 350º oven 15-20 minutes.
Streusel Topping: In a small bowl combine the brown sugar, flour and cinnamon. Cut in the butter until crumbly. Stir in pecans. Set aside.
Filling: Combine sugars, cornstarch, and seasonings. Gradually beat in the pumpkin, milk and eggs until smooth. Pour over the crust. Sprinkle with the Streusel Topping and bake in preheated 350º oven for 55-65 minutes or until a knife comes out clean in the cneter. Cool on a rack. Cover and refrigerate overnight to meld flavors. Garnish with whipped cream and additional cinnamon if you'd like.

Chocolate Chip Banana Bundt Cake
1 cup (2 sticks/8 oz./226g) butter, softened
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
1 cup mashed bananas
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup buttermilk
1 cup semisweet chocolate chips
1 teaspoon all-purpose flour
Topping
Confectioners' sugar or Chocolate Glaze (see recipe below)
Instructions:
Preheat oven to 350°F/180°C. Prepare a 9 or 10-inch bundt pan by spraying with cooking spray and coating with flour.
Add butter and sugar to bowl of an electric mixer and beat until creamy. Add eggs one at a time, beating well after each addition. Add vanilla. Add bananas and mix well. Add flour, baking powder and baking soda, blend. Add buttermilk, mix until smooth. Toss chocolate chips with 1 teaspoon flour and coat well. Fold chocolate chips into batter. Using a spatula, scrape batter into prepared bundt pan. Place into preheated oven and bake for 45-50 minutes or until a cake tester comes out clean. Immediately set pan onto a dishtowel that has been soaked in water and gently wrung out. Let pan sit for 5 minutes (this will make the cake come out of the pan without sticking). Unmold onto cooling rack and cool completely. After cake has cooled, dust with confectioners' sugar or drizzle with Chocolate Glaze (recipe follows).
Makes 12 servings.
Chocolate Glaze (optional)
Ingredients:
1/3 cup granulated sugar
1/4 cup water
1 cup semisweet chocolate chips
Instructions:
Heat sugar and water in small saucepan to full boil, stirring until sugar dissolves. Remove from heat; add chocolate chips. Stir with whisk until chips are melted and mixture is smooth. Cool to desired consistency, then use immediately.
Makes about 2/3 cup glaze.

1 14 oz can ready to use pumpkin pie mix
Mix, bake at 350 for 25 minutes.
Batter will be thick...but it's ok. They're AWESOME.

La Bete Noire (The Black Beast)
Ingredients
(Cake)
1 cup water
3/4 cup sugar
9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, diced
18 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped 6 large eggs
(Ganache)
1 cup heavy whipping cream
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
Lightly sweetened whipped cream
Preparation For cake:
Preheat oven to 350°F. Butter 10-inch-diameter springform pan. Line bottom of pan with parchment round; butter parchment. Wrap 3 layers of heavy-duty foil around outside of pan, bringing foil to top of rim. Combine 1 cup water and sugar in small saucepan. Bring to boil over medium heat, stirring until sugar dissolves. Simmer 5 minutes. Remove from heat.
Melt butter in large saucepan over low heat. Add chocolate and whisk until smooth. Whisk sugar syrup into chocolate; cool slightly. Add eggs to chocolate mixture and whisk until well blended. Pour batter into prepared pan. Place cake pan in large roasting pan. Add enough hot water to roasting pan to come halfway up sides of cake pan.
Bake cake until center no longer moves when pan is gently shaken, about 50 minutes. Remove from water bath; transfer to rack. Cool completely in pan.
For ganache:
Bring whipping cream to simmer in small saucepan over medium heat. Remove from heat. Add chocolate and whisk until smooth. Pour over top of cake still in pan. Gently shake pan to distribute ganache evenly over top of cake. Refrigerate cake in pan until ganache is set, about 2 hours. DO AHEAD: Can be made 2 days ahead. Cover and keep refrigerated.
Run knife around pan sides to loosen cake; release sides. Cut cake into wedges and serve with whipped cream. ( I recommend serving it with a raspberry sauce)
