My recipe says to use a roasting pan. I don't have one - can I use my casserole dish instead? It's deep and thick ceramic with a pyrex glass lid? Will it cook it the same way?

Your casserole dish will work just fine if the roast fits in it. In fact, I have a pork roast cooking in mine right now!

Yes if the roast fits. I wouldn't use the top. You could use a foil tent, then take it off for the roast to brown.

That should work fine but don't use the cover. Just use a meat thermometer to know when it is done.
