Everything except the skin, seeds, and the fiber like stuff. Scrape it out like you would a cantaloupe. Bake it with the skin on - it's easier to remove the skin after it's cooked than before. Remove the skin, either mash or puree in your blender and you are good to go. I chop the pumpkin into large chunks, put it in a pan with some water in the bottom of the pan, cover it, and bake it until a fork can go through all the "meat" of the pumpkin and into the skin.

You cut the pumpkin in half, take out seeds and strings, bake in shell. Then scoop out the pulp from the shel and puree it. Voila! That's what you use for a pie.

The flesh- you have to cook it first to separate it from the skin. After you scoop it out of the skin you have to puree it really smooth otherwise it will be stringy.
