Many fruits (i.e. bananas, apples, avocados, figs, mangoes, plums, peaches, pears and tomatoes) produce ethylene or ethene gas when they ripen and introducing this gas to unripe fruit can speed up the ripening process. These fruits are often shipped in a green, un-ripe state to prevent damage during transportation and then are treated with ethylene so they are at the correct stage of ripening for sale. At home you can encourage ripening of fruit by storing it with a ripe fruit which is producing ethylene. The 'gasing' effect will be increased if the fruit is placed in a plastic bag. So to ripen your un-ripe bananas place them in a plastic bag with a couple of ripe tomatoes or apples. This is not an instant fix, they will still take at least a day to ripen (but it is faster).
On the other hand, ripe, plastic-wrapped bananas should be unwrapped as soon as possible to allow the ethylene to escape and to prevent the bananas becoming over-ripe too quickly.
