Kentucky Hot Brown Sandwiches. LOVE THESE
6 tablespoons butter
3/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
1 1/2 cups turkey or chicken broth
1 1/2 cups milk
3/4 cup Parmesan cheese
12 slices toasted bread
sliced turkey
paprika
12 slices tomatoes
12 slices bacon, cooked
In a medium saucepan over low heat, melt butter. Blend in flour; stirring until smooth. Stir in salt and pepper. Gradually add broth and milk. Continue cooking, stirring constantly, until smooth and thickened.
.Add grated cheese; simmer for about 8 minutes. Sauce will be quite thick. Arrange 2 slices of toast on each of 6 ovenproof plates. Top each slice of toast with turkey slices, cover with sauce, then sprinkle with a little paprika. Top each with a slice of tomato and a slice of cooked bacon. Bake at 400° for 10 minutes or until sauce is bubbly. Hot brown sandwich recipe serves 6.

Seriously this is so good. Can't wait to make it again this year. Give it a try. It's not as hard as it looks. It may be a little time consuming but it is so worth it.
The Legendary Hot Brown Recipe
Ingredients:
4 oz. Butter
Flour to make a Roux (about 6 tablespoons)
3 - 3 1/2 cups Milk
1 Beaten Egg
6 tablespoons Grated Parmesan Cheese
1 oz. Whipped Cream (optional)
Salt and Pepper to Taste
Slices of Roast Turkey
8-12 Slices of Toast (may be trimmed)
Extra Parmesan for Topping
8-12 Strips of Fried Bacon
Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and Parmesan cheese. Add egg to thicken sauce, but do not allow sauce to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste.
For each Hot Brown, place two slices of toast on a metal (or flameproof) dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan cheese. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross two pieces of bacon on top, and serve immediately.

We have a Late Night Turkey Day party. Basically, we invite over a lot of friends, and tell everyone to bring over the best leftover from their family T-Day feast, and hang out and watch bad movies until two or three in the morning. Everyone noshes on Tim's mom's sweet potatoes or my green bean casserole or the twenty pumpkin pies that always show up. Usually, by the end of the party, all the leftovers are gone!

We make a turkey casserole:
2 cups diced turkey
2 cups chopped celery
1 small onion, finely chopped
2 cups shredded cheese
1 tbsp lemon juice
1 tsp salt
1/2 tsp pepper
1 cup Miracle Whip or mayo
1 cup French's Onion Rings
Preheat oven to 400 degrees F. In a buttered casserole dish combine all ingredients and top with extra fried onions and cheese. Bake for 25 minutes or until top is brown and bubbly.

i de bone the turkey and use the carcass to make some good turkey stock i do it with celery, onions, carrots, poultry seasoning and i put in salt and pepper and add 2 cloves of garlic and i simmer it over night or the next day all day and drain and make a big pot of turkey soup... we generally freeze the left over turkey to use in turkey salad and other dishes and it gets used up by january...

I pull all of the turkey off of the bone and I make turkey sandwiches. Which my hubby loves just as much as Ross loves Monica's on Friends! I spread some cranberry sauce on the bread and layer turkey and even a little mashed potatoes and peas on some toasted bread! YUMMO!!!!!!
Yours is a great idea too...I never thought of that...it may happen this year...wish me luck!

My Mom would make homemade plain waffles, then pour hot turkey with gravy over them. It is better than the flimsy white bread and will fill you up. Yum yum

I shred the turkey, mix it together with the leftover stuffing, and shape them into patties. I brown them in a pan with butter until they're hot and crispy, and top it with cranberry sauce.
