Breakfast casseroles can be very diverse. You can put any ingredient in that you like, but stay away from fruits and some veggies, like tomatoes because they have a lot of water in them. I see a lot of recipes with bread in them. This makes no sense to me. If you use potatoes, be sure to blanch or cook them in advance. I like to make frittatas or a baked omellette. It's like a quiche without the crust. Use a good heavy pan and start on the stove top. Mix 4-5 eggs and poutr into well greased pan over med heat. Start layering your ingredients liek potaotes, peppers, sausage, bacon, ham olives or whatever you like for breakfast. cover with a couple more beaten eggs and then pop into 350 degree oven until you see that the eggs on top are starting to turn golden brown. Shake the pan a little and see if the casserole shakes. If not top with cheese and bake 5 more minutes.
A hint, use oily chesses like parmesan or low quality chedar or swiss sparingly or you will have a greasy casserole. You cna put cheese inside but use sparingly. When using potaotes, I recommend you use pre-cooked frozen like hashbrowns or potatoes O'brien.

Breakfast Casserole Supreme:
1¼ hours 20 min prep
12 servings 1 9x13 inch casserole
1/4 cup margarine
1 small sweet onion, chopped
1 small green pepper, chopped
2-3 medium tomatoes, chopped
1 (24 ounce) bag frozen hash brown potatoes
12 eggs, beaten
1/2 lb cubed ham or thin sliced ham or cooked crumbled bacon or sausage
3 cups cheddar cheese, shredded
Melt margarine and place in the bottom of 9" by 13" baking pan.
Spread potatoes (still frozen is okay) in bottom of the pan.
Sprinkle chopped vegetables over potatoes.
Add salt and pepper to taste.
Sprinkle meat over potatoes and vegetables.
Note: At this point you may continue or casserole may be refrigerated overnight.
Pour beaten eggs over potatoes.
Bake at 350 degrees for 45 minutes.
Remove from oven and sprinkle cheese evenly over top.
Bake another 5-10 minutes or until cheese is hot and bubbly.
Remove from oven and let set for approximately 5 minutes.
Cut into 2.5"-3" squares and serve with a spatula. Enjoy.

Make this casserole the night before, then refrigerate and pop it in the oven in the morning.
INGREDIENTS:
12 slices white bread
1 (approximately 11 ounces) can white kernel corn, drained
1 (4 ounce) can chopped green chiles, undrained
2 cups (8 ounces) shredded Monterey Jack cheese or Mexican blend
4 eggs, beaten
2 cups milk
1 teaspoon salt
PREPARATION:
Remove crust from bread; place 6 slices in a lightly greased 12x8x2-inch baking dish. Spoon half of corn and half of chiles over the bread; sprinkle with half of the Monterey Jack cheese. Layer remaining bread, corn, chiles, and cheese.
Whisk together eggs, milk, and salt; pour over last layers. Cover and refrigerate casserole overnight, about 8 to 10 hours. Remove from refrigerator; let stand 30 minutes. Bake, uncovered, at 350° for 40 to 45 minutes.
Fiesta breakfast casserole serves 8.
This dish is great with salsa when serving.

BREAKFAST CASSEROLE
1 1/2 pounds sausage
6 slices bread, cubed
1 1/2 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
2 cups milk
1 teaspoon dry mustard
4 ounces mushroom pieces, drained
1/4 cup green bell pepper, diced
1/4 cup green onion, diced
Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with remaining ingredients. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes.

The breakfast casserole with the bread is great. It's even better if you use those shredded hash browns on the bottom instead of the bread. The fresh hash browns in the dairy/egg section are the best, I think!

This is one I make all the time and it is DELICIOUS! You can throw this together the night before and then cook it the next morning.
2 1/2 cups frozen shredded hash brown potatoes
3/4 cups shredded Monterey Jack
1 pkg. Knorr's Leek Soup mix
1 cup chopped fully cooked ham or Canadian bacon
1/4 cup sliced green onion
4 beaten eggs or 1 cup egg substitute
1 - 12 oz. can evaporated milk
1/4 tsp. pepper
1/8 tsp. salt
Crazy Jane salt or Mrs. Dash
Spray a 2-quart square baking dish with Pam. Arrange potatoes evenly in the bottom of the dish. Sprinkle cheese, ham, green onion over all. In a mixing bowl combine eggs, milk, pepper, salt, soup mix. Pour over mixture in baking dish. Sprinkle with Crazy Jane's salt and/or Mrs. Dash. Cover with foil or plastic wrap and refrigerate overnight. The next morning, bake uncovered at 350 for 1 hour until golden brown. Let stand 5 minutes before serving.

Here's one of my favorites that's easy and filling (especially after a nite of revelry!)
2 boxes Au Gratin Potatoes
1 lb platter bacon, peppered preferred, chopped
1 6 oz package of shredded cheddar and monterey jack cheese.
3 green onions, chopped
1/2 cup sour cream
Make au gratin potatos as directed adding sour cream and chopped green onion. Saute bacon and cut into pieces. Drain well. Bake potatos according to package directions and remove from oven. Top with bacon and cheese, cover until cheese has melted. This is good with hot sweet rolls and strong coffee!

make omelet using eggs, diced bell pepper,chopped onion, shredded Cheddar cheese, and cubed ham
chop the potatos into thin round slices and fry in skillet
take fried potatos an make a layer in the bottom of your dish then put the omelet then more potatos..keep doing until you run out. put cheese on top and place in oven for 10 minutes on 250 degrees

Take a 9x13 dish
layer it with cinnamon raisin English muffins
take about a dozen eggs and beat them
add about 3 cups shredded cheddar into your eggs
chop 1 med onion add to eggs
pour over English muffins bake at 385 for about 20 min
cut into squares top with sour cream ans cracked pepper
You can add breakfast sausage to this if you like

This is super EASY and EVERYONE loves it when I make it.
2 cans of crescent rolls
1lb ground sausage
1 8oz pkg of cream cheese
-place one can of the crescent rolls in the bottom of a square baking dish. (you'll have to pull them apart and arrange them so that there are no seams.)
-brown the sausage and drain it
-mix sausage and cream cheese together and then spread it on top of the bottom layer of crescent rolls
- cover the mixture with the remaining can of crescent rolls and try to seal the two layers together
-Bake in an 350 degree oven until the top of teh crescent rolls are lightly browned.
