I don't really want to add flavor, just make it moist. I'm actually using a Jiffy mix that only makes half the amount of a regular cake mix, so that might make a difference.

To make your Jiffy Cake moist add 1/2 cup of mayo or miracle whip - either works. If you bought regular cake mix you would use a whole cup.

Also, if you just mix the cake mix and a 1/2 can of diet soda and bake the cake - it will be moist - don't add the eggs, oil, etc... just the mix and the soda. Again, use a whole can for a regular box of cake mix...

After it is baked, you can use a pastry brush to brush some sugar water on the cake itself...not much...just like you are brushing egg whites on a pastry to make it shiny. You will have to wait a bit to ice it., though. I have made quite a few wedding cakes, and I have used this method a lot. It doesn't add any flavor and you can control how moist it gets. I know it sounds weird, but I have gotten many compliments on my cakes about how they are not dried out.

Butter. To make my Yellow Cake Mix moist I fold in a Butter Cake Mix w/Almond Extract... people think I bought it from a bakery it's so moist and delicious.

Try using milk for the water called for. Though you won't change the flavor too much, a small bit of vanilla extract added to yellow cake gives it a "home made" taste as well. (For a jiffy box, 1/2 tsp would be good.)

1 cup of mayonaise and 3 eggs instead of the oil. You can't taste the mayonaise in the cake but it makes it super moist.

Don't use butter instead of the oil. It is better to use a cube of softened margarine in place of the oil. Makes the cake come out perfect and everyone will ask you where you bought it!

Applesauce instead of oil. It makes the moistest cake you'll ever eat and it gives an added bonus of making it more low fat.

Plain Yoghurt and a touch more baking powder or bi carb of soda. Makes cakes lighter too.

You can add honey in place of sugar required and your cake will be moist and stay fresher longer
