Sweet Potato Casserole.
1 1/2 cups warm mashed sweet potatoes
1/2 cup granulated sugar
4 tablespoons melted butter
1 egg, slightly beaten
1/2 cup flaked coconut
1/3 cup milk
1/2 teaspoon vanilla

Topping:
1/2 cup light brown sugar
1/2 cup pecan pieces
1/4 cup flour
4 tablespoons butter, melted
dash salt
PREPARATION:
Combine mashed sweet potatoes, sugar, butter, egg, coconut, milk and vanilla; mix well. Pour into a buttered 1- to 1 1/2-quart casserole dish. Mix light brown sugar, pecans, flour, melted butter or margarine, and salt. Pour over top of potato mixture. Bake at 350° for 20 to 30 minutes.
Serves 4.

Deep Fried Turkey

This recipe should be made outdoors; making it in the kitchen is too dangerous.

Serves: 10-12


Ingredients:

1 - 15 pound fresh turkey
4 tablespoons rubbed or ground sage
10 medium whole bay leaves
3 ¼ teaspoons dried thyme
3 ¼ teaspoons dried oregano
4 gallons peanut oil
Let turkey brine overnight if you don't have fridge space, use a cooler to brine in. Two hours prior to cooking time drain,
rinse and pat dry turkey.

Finely grind bay leaves in spice grinder; transfer to small bowl.
Finely grind thyme, oregano, and sage separately; add to bay leaves.

Rub 1/3 spice mixture in inside of turkey and the rest on outside of
turkey; place in roasting pan.

Let turkey come to room temperate. Using a wooden skewer, thread
neck flap securely to bottomn of turkey. Fold wing tips under. Using
steel or aluminum wire, truss legs and Pope's nose together
securely; form a handle with wire. This will enable you to hold
turkey while submerging in hot oil.

Heat oil in 10-gallon pot with liner basket over high heat until
temperature registers 360°F. Holding turkey by handle, immerse in
oil. Maintain temperature at 360 °F while frying. Fry until golden
brown, about 45 minutes, or 3 minutes per pound.

Lift turkey from oil; transfer to a wire rack over a roasting pan.
Drain for 5 minutes.

I keep it simple and traditional now our first year in the house we just bought I had 26 dishes. Yikes !!! Now it is turkey with sage stuffing on the side, pumpkin pie spiced carrots with brown sugar, garlic smashed red potatoes, gravy, Green salad with dried cranberries and spiced nuts with pear dressing. Pumpkin and apple or walnut pie for dessert with whipped cream. I'm making zucchini bread as well and sugaring the pans instead of flouring them.

try this one..

Roasted Turkey with Fresh Herbs

1 fresh or frozen (thawed) whole turkey
6-8 whole fresh sage leaves
2 tsp. fresh thyme leaves
1-2 tsp. poultry seasoning
1 1/2 tsp. salt
1/2 tsp. coarsely ground black pepper
1 1/2 C poultry stock

pan gravy

Remove giblets and neck from turkey, reserve for gravy. Rinse turkey with cold running water and drain well. Blot dry with paper towels.

Gently loosen skin from the turkey breast without totally detaching skin and carefully place fresh herbs under the skin. Replace skin. (photo below shows lifting skin). Stuff turkey of desired.

Place turkey, breast side up, on a rack in a large shallow (about 2 1/2" deep) roasting pan. Coat turkey lightly with oil and sprinkle inside and out with salt, pepper and poultry seasoning. Insert an oven safe meat thermometer into the thickest part of the thigh, being careful the pointed end of the thermometer does not touch the bone. Pour poultry stock into bottom of pan.

Roast turkey in a pre-heated, 325° F. oven. To determine the approximate amount of time needed for cooking, click here for our Turkey Roasting Chart. Loosely cover with aluminum foil to prevent over browning, remove foil during last hour and a half of cooking time. Continue to roast until thermometer registers 180 degrees F in the thigh, or 170 degrees F. in the breast.

Remove turkey from the oven and allow it to rest for 15-20 minutes before carving. Use juices to make pan gravy (follow link for directions)

Last year I made a great crawfish tail bread dressing. I always wrap my turkey in a butter, white wine, & herbed cheese cloth. When I baste the turkey, I baste the cook (ME) with the wine.

Here is what we usually have...
turkey, ham, cranberry sauce, String bean casserole, Cream corn pudding, Stuffing, mashed potatoes,sweet potatoes, rolls, cauliflower,
creamed onions and there is more, pretty basic recipes.
Oh man...I can't wait!

My favorite things we have every year are Pumpkin and Mississippi Mud pies!!!

We also always have green bean casserole, made with green beans, cream of mushroom soup, and crispy fried onions.
