You can't beat a good english mature cheddar, with some sweet biscuits like digestives,
OR
a nice creamy goats cheese with roasted peppers on a ciabatta is a perfect starter

The most delicious cheese is "Drunken Goat" and it is tasty sliced thin on a reduced-fat wheat thin with some balsalmic vinegar sprinkled on it and served with a tannin-rich Cabernet! Yum!

Pepper jack , w/ Ritz crackers , and I also like it w/ Ranch on the side that Hidden Valley 3 Cheeses kind anyway , it also the regular kind as well , you'll may think it's nasty , but me it's da shyt !

mix curd cheese and cream cheese, some double cream, caster sugar and gelatine. serve on a biscuit base, with rich cherry sauce topping.

Brie! Had it at my neighbours the other night.. She wrapped a whole brie in foil and then put it in the oven. She brought it out when it had melted and then cut open the skin and we all dived in with breadsticks etc.mmmmmmmmmmmm

Goat cheese in sandwiches, pizza and pasta. Brie is delicious when eaten with ham (in sandwiches, on crackers). Swiss is good in quiches or omelettes (especially if they have spinach in them!).
