Baked Slow Cooker Chicken

INGREDIENTS
1 (2 to 3 pound) whole chicken
salt and pepper to taste
2 g paprika
DIRECTIONS
Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

Crockpot Ravioli Stew
2 C. sliced carrots
1 onion chopped
2 cloves garlic minced
2 (14 oz) cans vegetable broth
2 (14 oz) cans diced tomatoes undrained
18 oz. can cannellini beans, rinsed and drained
1 t. basil
1/8 t. pepper
9 oz. pkg. refrigerated cheese ravioli
1/2 C. grated Parmesan cheese
Combine all ingredients except ravioli and Parmesan cheese in crockpot. Cover crockpot and cook on low 6 hours until carrots are tender. Increase heat to high and stir in ravioli.
Cover crockpot and cook 6-8 minutes until ravioli are tender. Sprinkle with cheese and serve.
Crockpot BBQ Chicken Wings
5 lb. chicken wings with tips cut off
1 bottle (12 oz) chili sauce
1/3 C. lemon juice
1 T. Worcestershire sauce
2 T. molasses
2 t. salt
1/4 t. hot pepper sauce
1 dash garlic salt
Place wings in crockpot. Combine all remaining ingredients and pour over chicken. Cook on low 6-8 hours or high 2-3 hours.
Crockpot Sausage Supreme
4 potatoes peeled and chopped
1 small onion diced
1 lb. ground sausage browned and drained
1 can Cheddar cheese soup
1 can cream of mushroom soup
2 T. water
Place potatoes, onion and browned sausage in the crockpot. Mix soups and water together and pour over the top. Cook on low for 8 hours. I check frequently because my crockpot cooks really hot and usually have to add more water to this to keep it from burning.
Slow Cooker BBQ Ribs
4 lb. country style ribs
1/2 C. cider vinegar
1 T. soy sauce
1 t. salt
dash cayenne pepper
1 can tomato soup
1/2 C. brown sugar
1 t. celery seed
1 t. chili powder
Layer ribs in crock pot. In mixing bowl, combine remaining ingredients; mix well. Pour over ribs; cover pot. Let cook 6-8 hours on low setting or until meat is falling off of the bone tender.
Crockpot Scalloped Potatoes
6-8 potatoes thinly sliced
1 can cheddar cheese soup
1 C. Velveeta chunked
1 1/2 C. shredded Cheddar cheese
1 can evaporated milk (12 oz)
salt and pepper to taste
Spray crockpot with cooking spray. Fill crockpot half full of the sliced potatoes. Layer 1/2 can of the soup, 1/2 C. of the Velveeta, 3/4 C. shredded cheddar and 1/2 can milk. Add salt and pepper to taste.
Layer remaining ingredients in same order. Cook on low about 6 hours. Check about halfway through to make sure you don't need to add more milk. You might want to pick up an extra can of evaporated milk just in case.

Slow Cooked Chicken Stew
INGREDIENTS:
3 to 4 chicken leg quarters, skin removed
1/3 cup water
1 can (10 3/4 ounces) cream of mushroom soup
salt and pepper, to taste
3 medium potatoes, cubed
2 medium onions, cubed
1 cup frozen corn, thawed
1 can (8 ounces) tomato sauce
1 envelope onion soup mix
Method
If desired, cut each chicken leg quarters into 2 pieces (thigh and leg). Mix mushroom soup with water in slow cooker. Add chicken pieces, salt and pepper. Cook for 1 hour on HIGH, then add all other ingredients and cook on LOW for 8 hours or cook for 4 hours on HIGH.
Serve hot with crackers.
Serves 3 to 6.
Herb Baked Chicken
INGREDIENTS:
3 pounds chicken parts or bone-in breast halves
1/2 cup fine dry bread crumbs
1/2 cup Parmesan cheese
2 teaspoons parsley flakes
1 teaspoon salt
1/2 teaspoon dried leaf oregano, crumbled
1/2 teaspoon dried leaf thyme, crumbled
1/4 teaspoon pepper
1/4 cup melted butter
butter, unmelted
Method
Remove skin from the chicken. Combine bread crumbs, Parmesan cheese, parsley flakes, salt, oregano, thyme, and pepper. Dip chicken in melted butter then coat with crumb mixture. Arrange chicken in a single layer, not touching, in a greased shallow baking dish.

CROCK POT CARNITAS
2 to 4 lb. pork butt roast
4 garlic cloves
1 fresh jalapeno pepper
1 bunch fresh cilantro
1 lg. can lite beer
Corn tortillas (without lard)
Insert garlic cloves in roast; place in crock pot with whole pepper and half bunch of cilantro which has been chopped. Season to taste. Pour in beer. Cook on high 4 to 6 hours until fork tender. Remove meat; shred. Serve in steamed tortillas with tomatoes, onions, cheese and cilantro. Great with refried beans and Cabbage Salad.

******MY FAVORITE TEXAS CROCK POT CHILI
2 (16 oz.) cans red kidney beans, drained
2 (16 oz.) cans chili beans, drained
2 (14 1/2 oz.) cans tomatoes, cut up
2 lbs. coarsely ground chuck, browned & drained
2 med. onions, chopped
1 green pepper, chopped
2 garlic cloves, crushed
3 tbsp. chili powder
1 tsp. black pepper
1 tsp. cumin
Put all of the ingredients into a 5 quart crock pot in the order listed above. Stir until all is mixed well. Cover. Cook on low for 10 to 12 hours (or high for 5 to 6 hours).
Crock pot Pulled Pork Barbecue
INGREDIENTS:
• 4 lb pork roast
• 2 onions, sliced, divided
• 1 onion, chopped
• 5 or 6 whole cloves
• 2 cups water
• 16 oz bottle of your favorite BBQ sauce
• salt and pepper
PREPARATION:
Place one sliced onion at the bottom of Crock Pot.
Stud pork roast with cloves and season with salt and pepper.
Place roast in slow cooker on top of the sliced onion. Cover with the second sliced onion and add enough water to fill Crock Pot two thirds of the way.
Cover and cook on low 8 to 12 hours.
Remove roast.
Remove and discard cloves, bone and fat as well as any water, onions and grease remaining in pot.
When pork roast is cool enough to handle, use a fork or your fingers to pull it apart until the entire roast is shredded.
Return the pulled pork to the crockpot. Mix in the chopped onion and BBQ sauce and cover. Heat on high for 1-3 hours or until the onions are soft.
Serve on large, crusty buns with a mustard based Carolina-style BBQ sauce. Garnish with dill pickle spears, thinly sliced raw onion and pickled pepperoncini (Italian banana peppers). Serve with crisp, homemade slaw. Carolinians would put the cole slaw on the pulled pork sandwiches..that's up to you.
NOTE: The above is the original recipe I was given. I have cooked the roast on high instead of low when I was in a hurry and didn't have that long. I have also done the last past on low and left to heat while we were at church and then it was ready to eat when we got home. I used a BBQ sauce that was very thick the first time and it was pretty dry, so since then I add a little water to it and it turns out perfect.
********PINTO BEANS IN A CROCK POT
3 c. picked and washed pinto beans
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tbsp. chili powder
1 medium chopped onion
1/2 lb. chopped salt pork (I buy the sliced) or 2 ham hocks
Place washed beans in a crock pot and cover with water to within 4 inches from the top. Add salt, pepper, garlic powder, chili powder, and chopped onion. Stir to mix. Add pork and cover. Cook on high for 1 hour and then reduce to low for 4 or more hours. If you are in a hurry, keep on high longer.
Serve with fried potatoes or cornbread.

Crock pots rule. My fave is Red Beans. I use small dry ones. Soak overnight. I put the beans, chopped onions, can of Ro-Tel tomatoes, beef smoked sausage, 1 can of water. I make rice and cornbread muffins, to go with. Enjoy!

Hamburger Stew (I'm cooking this today for Halloween!)
1 lb. hamburger, browned in skillet with 1 chopped yellow onion.
Add to crock pot, with beef broth, tomato juice, shredded cabbage, carrots, and salt.
Cook on low all day.
Easy and Delicious!
