I have done the "Prost" at the southern part of old town in Sachsenhausen Frankfurt Germany (it's been a while but it is quite a memory!).

Anyway to your question here is some that I have learned in my travels.

Polish - Na zdrowie. Vivat. (To your health pronounced "Na-stroh-via" or the way I pronounce it - Poles seem to have always accepted it anyway).

Belgium - 'Op uw gezondheid. Sound familiar in German? This is the Flemmish side, the French side and as in France will say "Santé".

Egyptian - I seem to recall Bisochtak.

Italy - Salute! (Roma ti amo!). Cin Cin is more formal - forget that Salute! was always best for me.

Romanian - somewhere I learned it along the way "Norac" = good luck or something like it.

What do I prefer to use? Good ole Yank "How's it goin'?" or the Polish version, I used to really like the Italian way - but everyone I know uses that.

For Italian, the most correct form is actually "alla salute!" = "to the health!", literally, but can also mean "a tribute to".
"Salute!", although sometimes used that way, is primary what we say to a person after he/she sneezed (it's true, no joking!)

"Cin cin" (spelt "cheen cheen") is more used and is not so formal.
Actually, my perception is "alla salute!" is seen as more formal.

Italian = Salute! (to health)
Spanish = Salud! (to health)
Swedish = Skål!
Finnish = Kippis!

In German also the word "Gesundheit" = (to) health is used.
