Gum has come from a number of trees over the years. Early people used the mastic tree, then the sapodilla tree, some people used spruce trees. I myself have made "gum" from the sap of the Sweetgum tree (Liquidamber styraciflua). Here is a link with some more information too.....

You get gum from a gum tree or you calypso.

It is used in ices made in the middle east and I think India too
