Xbox is no longer being made so games development has tailed off for it.
PS2s are still being produced in huge quantities (Sony don't want to drop it because they can't survive on PS3 alone and now the latest PS3 won't offer PS2 support) so games are stil being written for it.

Nope, Microsoft dropped Xbox games (and console) like a bad habit once the 360 came out, to help coerce people into buying that so they could get a start on the PS3 before it came out.
Guessing the same will happen once MS gets bored of the 360 and tries to get a lead in the next-next gen race.

Xbox is currently now dead as you said...
Microsoft knows that the 360 will be enough to get them alot of money!
As for the PS2 , it was a whole different thing, as Sony has known that the 360 has beat them severely, so they will need all the sales to their consoles to earn money...
As PS2 , is an exact PS3 shape version, controllers, mostly the console itself, it is easy for them , as most of their customers own a PS2, and mostly all the controls are the same...so it will takem like 1 week to get the game version to PS2... in fact they just have to remove the word SIXASIS controller from the game and its options . LOL :)
