I am doing exactly what you are doing, but I won't be in the woods and will eventually be 100% off-grid. I plan to harvest rainwater (do an internet search for rain water harvesting for some great sites) build my own wind power generator (do a search for otherpower dot com and also utterpower dot com). I am also in negotiation with a Taiwanese company that sells photovoltaic panels that are REALLY high quality and import direct to the consumer here in the USA. A small Kubota diesel generator (burning .25 gallons an hour) will charge my batteries on the calm, cloudy days. I am also going to employ a gray water system so the flush toilet isn't using up precious potable water.

buy a 10 by 10 storage shed [they come in kits] for the cabin, build a bed and table for it, go to a rual,king, or tractor supply, get a 50 gal plastic water tank, build a stand for it 8 ft off the ground,[use 4x4,s treated] use plastic pipe run it to cabin, with a shut off valve, make a large funnel for the top to catch rain water,
buy some solar lights [shed type] harbor freight has them, get a PUR water filter [it removes germs others dont ] at wal-mart, use a camping stove to cook on, buy a sleeping bag rated for 0 deg,

use either 5 gallon buckets or 50 gallon plastic drums. if you will be building by a river or lake use water hoses and a cheap battery operated sump pump to move water or a hand pump to pump the water to your house for a toilet. you can also catch rain water but I don't advise drinking it unless you boil it first. you can also get either solar panels or a generator or even a bunch of car batteries and a couple DC to AC converters for lights. another idea for water is dig a big hole and put a large sheet of plastic in the hole and when it rains it will start to fill up with water. The easiest way to purify water is to always boil it, and for heat use propane you can get 50 gallon propane tanks that one person can move with a little trouble when full but it can be done. also install skylights in the roof for natural light during the day.
