When the ball canister is closed, the pressure inside the can stops any air from the tennis ball from seeping out. After the can is open the air within the ball starts to escape. When the ball is new, there is greater pressure inside the ball than an older and more used one. The answer to your question is because there is more pressure inside the ball, the collision between the ball and the ground is more elastic. With the elastic collision, more energy is transferred back into the ball after the bounce than one that is an inelastic collision.

When a tennis ball is new, all the seams are tight and seals in the air, so it has a good bounce to it. However, when the tennis ball is old, the seams experience some wear and tear, so they are not sealed as well as they used to be. This means the tennis ball would loose some air, so you would not get as much bounce from it. I see this happen to my tennis balls at a rapid rate since my dog loves fetching them.

A new tennis ball is fully pressurized, and as time goes on and you continue to use the tennis ball, air leaks from the ball causing the air pressure in the ball to go down. The less air pressure in the ball, the less bounce it has.

It might. If the balls are flat, then it will not bounce well and the quality of your game is bad. That's why they use new balls at matches.
