it really depends. french is my best out of the three, but only because i had better instruction in it.
in japanese, you have to learn two alphabets and kanji (chinese characters). it's pretty phonetic though. because it is not related to english like spanish and french, there will be a lot more new concepts that come with learning this language.
spanish is also very phonetic. many people say it's easier because it is easier to read and pronounce phonetically. from my experience though, it has a new level of confusion than french as far as grammar, and there is so much variety depending on what kind of spanish you are learning (mexican, castillian, argentinian, etc.), which makes it more confusing.
EDIT:
whatever you choose, it will take some practice! don't be scared by what people say (including me) about french pronunciation, or spanish and japanese grammar. personally, i never had a problem with pronunciation in any language, so long as i repeat what i hear how i hear it. grammar takes a little longer to learn, but after some time it should come naturally!
oh, and don't let the level of difficulty influence your decision too much. take what you are interested in, or what you think will help you most in life.
at my high school, everyone who wanted the "easy way out" took spanish, while the "smart kids" took french and japanese. this made spanish class a living hell for me, because nobody else was really serious about learning it, and the teachers would literally give up trying to teach us.
i say french is easiest, but that is my bias (and have you noticed how my personal experiences are unfairly biased towards french???). in reality, they all have their challenges, and no matter what you take you will still have to put the effort into it if you want to learn.

I'm fluent in French and have taken AP French... I take Spanish at the High School honors level... and I watch some anime with subs.
French is very difficult to pronounce for someone who wasn't raised in a francophonic household. The spelling is very odd and there are a ton of small rules.
Spanish is much easier to pronounce than French, and easier for an English-speaker to learn than Japanese because it has the same alphabet and common roots.
I don't know enough about Japanese to say much, but I think it's probably easier to pronounce than French.
Spanish is probably your best bet.

It depends. Which do you think is easier? For me, it's French cause I'll learn it in school or Spanish cause I'm half Spanish.
