First, select the text you want to double space. Then go to Format>Paragraph, and check out the "Spacing" frame. It has an option to double space. The "Line Spacing" option is what you want to change. This is using an older version of Word, but it should get you started. I have Word 2002 (Office XP) on my computer.

1) In the paragraph section (with the HOME tab being selected by default when you open Word 2007)
2) The fifth icon from the left (or third icon from the right) is the line spacing icon (it has a drop down arrow)
3) Click the line spacing icon and select 2

Up on the menu bar click on "Format" then click on "Paragraph" - you'll see a box there where you can change single spacing to double spacing.
