I'm 6'7" tall, new rider, looking for a cruiser that would fit me, or at least a very customizable bike.

the only real answer is to put aside some weekends and go to some dealerships and sit on some bikes. the ones that you like, take for a spin and see if you still like it.
any other suggestion (like this one, and not that one) denys you the experiance of seeing whats out there and possibly getting an inferior bike.

The Harley's have the most options available for customizing. You said you are new to riding so you should follow the advice given above. Take a few weekends and visit some dealerships. Look around and see what feels comfortable for you.

I agree with Faber go check out a few dealerships and see what you like. I reccomend sticking with major manufacturers and if you want to buy american then for the love of all that is sacred buy a victory and avoid fly by night custom bikes like the plague. My personal faveortie cruisers are the Triumph rocket 3 and Yamaha V-max(sadly out of production). Hopefully you'll find something that works perfectly for you.

Harley Deuce with extended forwards.

Long bike and forwards would seat a basketball player comfortably.
Lots of aftermarket accessories available.

Personally I love the Victory bikes. Unfortunately I'm too short, I can't reach the foot controls comfortably, so you might want to check those out.

Harley Heritage or a Road king are big bikes.
