If they are in the ground, I would just put mulch around it and not to worry about the frost. It'll protect from the cold. If you are living in the cold region, potted plants need to be protected better, especially when it is in a terracotta pot. It might break as the temp. goes down. You might want to water time to time, as the water works as insulation.

Yes, In Massachusetts, they will turn funny colors in a light frost, like purple streaks in yellow mums. Some will die off, and other late blooming ones will hang on through a more serious frost, but not a KILLER frost! The Kale and cabbage will go to Christmas sometimes if you are lucky!

We live in Alaska & I have many plants in containers (easier to take care of) & I usually do not cover them. Then last spring it didn't look they would come back after the winter, but by fall they were blooming again. I personally do not cover my mums.

It's really not necessary to cover them because perennial mums are supposed to die back for the winter and then reemerge in spring.

one fall a few years back my wife left her mums in the garden (uncovered). the next year they came back very strong. we lived in south Jersey at the time. winters are not horrific theree but it does get below (and stay below for short spells) freezing quite often.
