Depends on what you mean by "zoology". If you mean the formal system of naming and classifying animals that we use today, it was invented by Carl von Linne (Linnaeus).

People have been studying and trying to classify animals for millenia. The written records go back to classical civilizations (Greek and Roman) but it's probably been going on way longer than that.

probably Aristole since he was one of the first individuals to document his studies though he studied a great deal more than just animals.
