I have corn in mine when we have meatloaf sometimes. My husband insists on peas & mashed potatoes with meatloaf but we have corn if we're out of peas. Just can't keep them from rolling into the potatoes.
Seriously though, I use Yukon Golds & put salt, pepper, butter, a little garlic & tarragon in mine.
