I never heard of a Fairy Cake before so I looked it up, and yes, I would love to pop over for some. I will bring the tea. What flavor would you like?

1/2 cup unsalted butter, softened 7 tablespoons sugar 2 large eggs 3/4 cup self-rising cake flour 1/2 teaspoon vanilla extract 2-3 tablespoons milk ICING 1 cup powdered sugar 1 egg white 3-4 drops of lemon juice food coloring Directions: 1. Preheat oven to 400 degrees F. 2. Line a 12 cup muffin tin with baking cups. 3. Put all the ingredients except for the milk into a food processor and blend until smooth. Pulse while adding the milk down the funnel to make for a soft consistency. 4. It doesn't seem like enough, but you can get enough into each baking cup, just scrape it all out and try to fill each one equally. 5. Bake for 15-20 minutes or until they are golden on top. 6. Cool on a wire rack, but remove from the tin as soon as possible. 7. Before decorating, slice off any mounded tops so you have a flat surface. For the icing: Mix the sugar, egg white and lemon juice in a small bowl til smooth and creamy, as that of heavy creamy. You can break the batch to make different colors of icing. 8. They look very cute. 9. You can top them with rosebuds and sugared daisies and fresh berries.

Sounds yummy ages since I had a decent fairy cake! For those who don't know they are very delicious along with a good cuppa tea!
