It's safe to use any automatic transmission fluid although auto parts stores have hydraulic jack oil in quart bottles.
Look near the actual pump ram for an Allen head set screw located on the handle end of the jack. They usually are facing upwards.
These fill holes are a pain in the a*s. We use a rubber battery fill bulb to add oil as the nozzle fits inside the hole. Needless to say we never add distilled water to batteries with that fill bulb.

"low viscosity "tractor hydraulic" oil work.(Jack Oil)
A lot of tractor hydraulics and some heavier earthmoving stuff uses hydraulic oil thats essentially the same viscosity as 10W motor oil.
open the oil fill plug unscrew the screw place a small oil funnel in the hole then slowly pour some hydraulic jack oil or 5w-30 motor oil in the jack until its up to the line in the hole.

Some of the cheaper ones are sealed units and don't have a fill port, but if yours does: Make sure the jack is fully lowered, remove the filler screw on the ram, and fill it with hydraulic fluid until it reaches the bottom lip of the filler hole.

if the jack is lowed by spining a knob, that is it. Otherwise, it has a fill cap. Hard to tell without knowing the brand.
