Consider taking up poker. Not that I'm promoting gambling, but look at one of the best poker players in the world, Doyle Brunson! He is so clever, witty and smart. He thinks quickly and I believe this all has to do with the constant thought process that is necessary with playing the game. You are always analyzing, thinking two steps ahead and you definitely will be much sharper. Doyle is well past 70 year old! The other answer about Suduko is true as well. If you aren't familiar with poker, pick up a book. It requires math calculations, betting odds, analyzing, memorization, etc.

Just a couple of things I know work:
Full night's sleep every night, at a regular bedtime.
Healthy diet, with fish oil and plenty of vitamin B and minerals.
Variety in you life (don't do the same things over and over - or the brain goes on 'auto-pilot').
Take at least one class a semester (brain is like a muscle, 'work it out' and it will work better).
Switch hands: If you are right handed, start brushing your teeth (and other activities) with your left hand. Makes your brain work harder... and better.
Question the things in your life that you normally take for granted. The more you analyze, the more analytical you will become.
And remember (and this is important): Learn your own 'Mental Style'. Just because someone else answers quickly doesn't mean you have to - nor does it mean they'll be right.
In an interview, debate, etc. it is far more important to be right than fast. If you need to stop for a few seconds to organize your thoughts, then do that!
Good luck, and remember this also: Self confidence has a lot to do with this process.

I think the best way to do that is if you read a lot and have intellectual talk with great minds which could be your friends, teacher or parents or anybody that can hold a very good intellectual talk with you with any topic.
There is a saying that the person that does not read is not better than the person that cannot. so reading is far better than watching TV or any other thing because it really develops you mind and makes you reason very well.
From poets to romance to drama to good books you can think of and very interesting to you as a person.

Practice not using filler words, a, and, um, oh, etc... Pause and think about what you are going to say, rather than just saying, and maybe end up sounding not as intelligent as you are. Do mind puzzles, crosswords, it keeps the brain a thinking and sharp!

Maybe carry a sharpner with you! (Just kidding!) Seriously, it is said that moderate consumption of nuts, especially almonds, can help improve one's brain power! Once the brain functions well, one becomes mentally sharp too!

Try mind exercises and puzzles. Also have friends fire away questions at you. You will get used to have to thinking on your feet. Check out the article below. It is a women's site, however the info applies to men and women alike.

read a lot. if you encounter words that you are not familiar with, look up in a dictionary. you increase your vocabulary that way.
even if you eat peanuts or other food believed to make us intelligent, you cannot say much about things you do not know. if you are a "well- read" person, you know much and can converse freely on any subject. READ!
