A rollercoaster has ups and downs. In one minute you might be at the top of the world, in the next you might be down at plunged into a deep rut, and it's a while before you're back at the top again. The speed varies - sometimes it goes too fast, sometimes it's crawling at a really slow pace right before it starts racing down the steeply inclined track at a vomit-inducing speed. When someone compares life to a roller coaster, they are essentially saying that their life is unstable. There are high times, the good times; and then there are the deep lows. There are variances and changes in mood and emotions. You friend could be having problems. He might be indecisive about things - you and his future, or whatever else is going on in his life. I guess just try to support him and be there for him as best as you can. Since it's apparent from what you said that he likes you, he probably just needs a little time 'til he's ready to be with you like that. Anyway, good luck with everything.
