Once I have it ... what documents can I obtain with the alias instead of my birth name? (passport, license, house deed)

It depends on the country -- most countries do not recognize or allow for legal aliases.

For example, in the US -- you cannot get any of the documents you list under a legal alias -- only under your birth name, or if you legally change your name (through the courts).

Other countries may be different -- but very few (if any) allow you to operate with two legal names at the same time.

The exception is for businesses -- you can have a business "alias" called a DBA ('doing business as') and you can have property or assets in the name of the business. But that wouldn't cover things like a passport or personal license.

You would need to file legal docuemts asking for a name change, once the papers are filed you would have to publish the name change for at least four weeks and then appear in court to see if the court grants the name change.
