There's no immigration check between the Channel Islands and the UK. So your baby will not need a passport.

I don't think the authorities require a passport for the journey from UK to CI and back. HOWEVER most airlines now insist on photo ID for every passenger. Suggest you ask your transport provider.

Wherever an adult needs a passport, a child/infant/baby needs one too.

Depends where you are starting from. For these purposes I will assume you are in the UK. Bring photo ID, driving licence for yourself. That's all you will need.
