what does it mean when a guy tells a girl that he wouldn't have backed out of a fight if she weren't there?

It means that he feels that the person that he would have fought is not beyond hurting you should he loose and is not able to protect you.

it means he was trying to make an impression on you. That he's not a violent guy. Some guys love a fight, and some guys love to talk about fighting. If anything, he was trying to sound tough but sensitive to you so that you can imagine him as the type of guy who's got his head on straight.

If you mean backing out of a fight or trouble, his intention was sort of respect of your presence keeping away the trouble which you might be involved in case you witness it specially if he would be hurt and you could not resist to fight back too.
