Smoking serves 2 purposes: Cooking and Preserving. In the days before refrigeration, smoking was one of the few ways people could preserve meat. But smoking also cooks meat, so it's safe to eat "as-is", but most people prefer smoked sausage heated up or grilled.

When they are smoked they are usually fully cooked....The smoking process is a cooking process....It,s cooking with wood to give them the smoked flavor...I have never seen a sausage that has been truely smoked not cooked...The raw ones you are refering to have smoke flavor as an additive!!!!
