I am looking for a bakery style chocolate frosting that I can pipe onto cupcakes and brownies. Every chocolate frosting recipe that I have seems too heavy and rich. Does anyone have a good chocolate frosting recipe?

Bakery Style Frosting Recipe


Ingredients

* 1 1/2 c. sifted confectioner's sugar
* 1/4 t. salt
* 1 egg (just the white for white frosting)
* - if making chocolate icing add 1/3 c. of cocoa
* 2 T. water
* 1/4 c. granulated or confectioner's sugar
* 1/2 c. butter (if making choco. icing add 2 more Tbls.)
* 1t. vanilla


Directions

1. Mix together the 1 1/2 c. xxx sugar, salt, and egg (and cocoa for chocolate icing) in a bowl.
2. Make a simple syrup by mixing together the water and 1/4 c. sugar and cooking on HIGH in the microwave for 2 minutes. (You can also do this by bringing to a boil on the stove and cook for 1 minute. )
3. Stir the syrup mixture into the egg mixture immediately after cooking.
4. Add butter and vanilla and beat with a mixer until creamy.

Chocolate Buttercream Frosting


1/2 cup butter, softened
2/3 cup cocoa powder
2 teaspoon vanilla
3 cups confectioners' sugar
6-8 tablespoons water, depending upon thickness you want

With electric mixer on high, beat butter until fluffy. Beat in cocoa powder and vanilla on low. Gradually beat in confectioners' sugar, alternating with water, until desired thickness is achieved. For thinner frosting use more water. For thicker frosting, use less water.
